- 2 TBSP apple cider vinegar
- 2 TBSP tamari lite
- 1 TBSP Eden Foods Organic Brown Mustard
- 1 1/2 TBSP pure maple syrup
- 1 tsp smoked paprika
- 1/4 tsp garlic powder
- 1/4 teaspoon ground black pepper
For serving
- Eden Foods Organic Yellow Mustard
- dill relish
- fresh herbs
Instructions
- Wash and scrub the Japanese yams and carrots thoroughly. Using a knife, chop off the tapered ends of each potato. Scrub the carrots and trim them to be the same length as the sweet potatoes you’ll be using. Pro tip: Cut off the thin end and retain as much of the thicker part of the carrot as possible to create more uniform “dogs.”
- Peel the carrots with a vegetable peeler and then shave them carefully to ensure a consistent width. Pro tip: Use the vegetable peeler to gently round out the ends of the carrots, giving them a more authentic “hot dog” shape!
- In a medium baking dish, combine all the ingredients for the marinade. Add the prepared carrots to the marinade and let them soak for 30 minutes at room temperature. This step can be skipped if you’re short on time, but marinating enhances the flavor significantly.
- Preheat your oven to 400 °F (200°C). Line a baking sheet with parchment paper and arrange the scrubbed Japanese yams on it. Pierce each yam several times with a fork. Place them in the oven along with the marinaded carrots in their baking dish.
