Description

These Moroccan Mason Jar Salads are an excellent meal prep solution, packed with raw chopped vegetables, protein-rich chickpeas, wholesome quinoa, fresh herbs, and a vibrant, zesty Moroccan-inspired dressing. Ideal for healthy, convenient lunches throughout your busy week!


Ingredients

For the Mason Jar Salad:

  • 1 head cauliflower, finely chopped
  • 1 cup shredded carrots
  • 1 15-oz. can garbanzo beans (chickpeas), drained and rinsed
  • ¼ cup sliced green onions
  • 1/2 cup chopped fresh cilantro
  • ¼ cup chopped pitted kalamata olives
  • ¼ cup Open Nature® slivered almonds
  • ¼ cup dried cranberries
  • 1 cup cooked quinoa

For the Zesty Moroccan Dressing:

  • 1 tsp OOrganics® Organic Cumin
  • ½ tsp turmeric
  • pinch of OOrganics® Organic Cinnamon
  • 4 TBSP extra virgin olive oil
  • 2 TBSP fresh lemon juice or apple cider vinegar
  • 2 tsp minced garlic (or substitute 1/4 tsp garlic powder)
  • pinch of Himalayan sea salt
  • pinch of Signature SELECTTMGround Black Pepper


Instructions

  1. Prepare the Dressing: Combine all dressing ingredients in a high-speed blender and mix on high until it’s fully incorporated and smooth. If using powdered garlic, you can also whisk or shake this dressing up by hand in a sealed container. Refrigerate until ready to use. This can be made several days in advance.
  2. Assemble for Meal Prep: Divide the prepared dressing evenly between the bottom of 3-4 large (at least 16oz) mason jars. Next, carefully layer the salad ingredients in the following order to prevent sogginess: cooked quinoa, garbanzo beans, finely chopped cauliflower, shredded carrots, chopped kalamata olives, sliced green onions, then topped with chopped cilantro, Open Nature slivered almonds, and dried cranberries. Securely seal each jar with a lid. Store the assembled mason jars upright in the refrigerator for up to one week.
  3. To Serve (Meal Prep): When ready to enjoy, simply invert the mason jar and give it a good shake to ensure the dressing coats all the salad ingredients thoroughly. Remove the lid and either serve into a bowl or eat directly from the jar.
  4. To Serve Immediately: If you’re not meal prepping, add all of the salad ingredients to a large mixing bowl. Pour the freshly made dressing over the salad and mix well until everything is evenly coated. Divide the salad between 3-4 plates and enjoy immediately.
