Ingredients
- 4 large collard greens
- 1 cup your favorite hummus (can be store-bought or homemade!)
- 1 cup raw sprouted walnuts
- 1 cucumber, diced
- 1/2 cup shredded carrots and/or beets
- 1 cup microgreens
- 1 avocado, thinly sliced
- Black pepper
- Himalayan sea salt
- fresh squeezed lemon
Instructions
- Rinse and dry your collard greens thoroughly. To ensure they are pliable and easy to wrap, carefully trim down the tough central stem. Use a sharp knife to shave down the backside of the stem as much as possible, being careful to keep the leaf intact. This step is crucial for preventing tears when rolling. Once prepped, wrap the leaves in a paper towel and refrigerate until you are ready to use them.
- Prepare your hummus. If you are not using a store-bought variety, now is the time to whip up your homemade hummus. For a delicious and wholesome option, I highly recommend using my Oil-Free Roasted Red Pepper Hummus!
- Next, get your vegetables ready. Chop your cucumber into small, even dice. Shred your carrots and/or beet for a burst of color and crunch. Finally, rinse and thoroughly dry your microgreens.
