Description
Dark Chocolate Beet Muffins made with cacao powder and cooked beets. Perfect for snacking, breakfast, or dessert!
Ingredients
- 2 flax eggs (2 TBSP ground flaxseed + 6 TBSP filtered water)
- 1 1/4 cup gluten-free oat flour OR almond flour
- 1/2 cup raw cacao powder
- 1/2 cup unsweetened almond milk yogurt
- 1/4 cup pure maple syrup
- 1 cup beet purée (1 package Love Beets, puréed OR ~1 small bunch beets, steamed, peeled, and puréed*)
- 1/4 cup unsweetened almond milk
- 1/2 cup dairy-free dark chocolate chips
Instructions
- If you haven’t already prepared the beet purée, do this first!*
- Preheat oven to 350°F (175°C) and prepare a muffin tin by lining it with muffin liners. This ensures easy removal and quick cleanup.
- Prepare the flax egg: In a small bowl, combine the ground flax meal and filtered water. Stir well and let it sit for at least 5 minutes, or until it has thickened to a gel-like consistency. This acts as a binder in vegan baking.
- In a large mixing bowl, add all of the remaining ingredients for the muffins, except for the dark chocolate chips. This includes your prepared flax egg, gluten-free flour (oat or almond), raw cacao powder, almond milk yogurt, pure maple syrup, beet purée, and unsweetened almond milk. Stir thoroughly until all ingredients are just combined and a smooth batter forms. Be careful not to overmix, as this can lead to tough muffins.
- Gently fold in the dairy-free dark chocolate chips. Distribute them evenly throughout the batter to ensure chocolate in every bite.
- Evenly divide the batter among the prepared muffin cups. Each cup should be filled with approximately 1/4 cup of batter. For an extra touch, you can top each muffin with a few additional chocolate chips (optional) and a light sprinkle of oat flour (also optional, for a rustic look).

Allow them to cool slightly, then transfer the cooked beets to a high-speed blender or food processor and blend until completely smooth. You may need to add a tablespoon or two of water or almond milk to help it blend, if necessary, to achieve a smooth consistency. Save any remaining purée for another delicious use!
