Drizzled with a zesty, oil-free detox tahini dressing, this vibrant vegan salad is designed to refresh, energize, and nourish your body with wholesome ingredients. Perfect for meal prep, a light lunch, or a satisfying entree, it’s a feel-good recipe you’ll want to make again and again.


Ingredients

For the Detox Salad:

  • 1 head broccoli, washed and chopped into small florets
  • 2 TBSP sriracha (adjust to your spice preference)
  • avocado oil spray (optional, for roasting oil-free if preferred)
  • 1 medium-firm pear, diced (ensure it’s not overly ripe for best texture)
  • 1/2 cup raw walnuts
  • 1 TBSP nutritional yeast
  • 1 1/22 ripe avocados, diced
  • 1 cup red onion, finely chopped
  • 1 bunch of kale, thoroughly washed, stemmed, and finely shredded (massaged optional for tenderness)
  • 4 cups of fresh arugula
  • handful of fresh cilantro, roughly chopped

For the Creamy Detox Tahini Dressing:

  • 2 TBSP runny tahini
  • 1/4 cup filtered water + more as needed for desired consistency
  • 24 TBSP fresh lemon juice (start with less and add to taste)
  • 1/4 tsp powdered ginger
  • 1/4 tsp chili powder
  • 1/8 tsp garlic powder
  • Himalayan sea salt, to taste
  • pinch of freshly ground black pepper


Instructions

  1. Prepare Sriracha Baked Broccoli: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper for easy cleanup.
  2. Add the broccoli florets to a large mixing bowl. If using, lightly spray with avocado oil (skip this step for an entirely oil-free preparation). Next, add 2 Tablespoons of sriracha to the bowl and mix thoroughly to ensure all florets are evenly coated. For a spicier kick, feel free to add a little more sriracha; reduce for a milder flavor.
  3. Spread the coated broccoli in a single layer on the prepared baking sheet. Bake for 25-30 minutes, or until the broccoli is fork-tender and exhibits a beautiful golden-orange hue. Remove from the oven, allow it to cool slightly, then refrigerate until you are ready to assemble your salad.
  4. Toast Walnuts: While the broccoli bakes, spread the raw walnuts in a thin, even layer on a separate parchment-covered baking sheet. If desired, spray lightly with optional avocado oil. Toss the walnuts with nutritional yeast – this adds a wonderful cheesy, umami depth of flavor. Bake at 350°F (175°C) for 8-10 minutes, or until they become fragrant and lightly browned. (You can also skip this step and add raw walnuts, but toasting enhances their flavor and crunch significantly).
  5. Prepare Fresh Ingredients: As your baked items are cooling, wash and chop all remaining fruits and vegetables: dice the medium-firm pear, dice the avocados, finely chop the red onion, and wash/shred the kale and arugula. Refrigerate these fresh ingredients until you’re ready for assembly. *Pro Tip: To prevent browning, toss diced pear and avocado with a little extra lemon juice if preparing significantly in advance.
  6. Make Detox Tahini Dressing: Combine all dressing ingredients (tahini, filtered water, fresh lemon juice, powdered ginger, chili powder, garlic powder, Himalayan sea salt, and black pepper) in a high-speed blender or food processor. Blend until completely smooth and well combined. Gradually add more filtered water as needed, a tablespoon at a time, until the dressing reaches your desired creamy, pourable consistency. Start with 2 Tablespoons of lemon juice, then taste and add more for increased brightness and tartness if preferred.
  7. Assemble the Salad: To create your individual bowls, start with a generous base of shredded kale and arugula. Artfully arrange the sriracha-baked broccoli, diced pear, toasted walnuts, diced avocado, finely chopped red onion, and fresh cilantro on top.
  8. Serve and Store: Drizzle generously with the prepared Detox Tahini Dressing and serve immediately for optimal freshness and crunch. For meal prep or leftovers, store the salad components (greens, roasted veggies, fruit, nuts, onion) and the dressing separately in airtight containers in the refrigerator for up to one week. Reassemble each serving just before eating to maintain maximum texture and flavor.

Notes

As mentioned in the instructions, if you are preparing the pear and avocado in advance, a quick toss with a little extra lemon juice will help prevent them from browning and keep them looking fresh.
