  • 6 TBSP super-fine almond flour
  • 1/4 tsp baking powder
  • 1/4 cup coconut milk lite
  • 3 TBSP coconut cream
  • 1/4 cup pure maple syrup, divided
  • 3 peaches, sliced


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a large mixing bowl, combine the oat flour, super-fine almond flour, and baking powder until well combined. Add the coconut cream and half of the pure maple syrup, mixing with a fork until a rough crumble forms.
  3. Gradually add half of the lite coconut milk to the flour mixture and mix until just combined. Continue to add additional coconut milk, 1 teaspoon at a time, until you achieve a stiff but pliable dough that holds together. Shape the dough into a large sphere and set aside to rest for a few minutes.
  4. Lightly dust a surface lined with parchment paper with a little oat flour. Place the dough ball on top, then cover it with another sheet of parchment paper. Using a rolling pin, roll the dough into a thin, roughly oval or circular shape (about 1/8 to 1/4 inch thick).
  5. Carefully peel off the top parchment paper and transfer the bottom parchment paper with the rolled dough onto your prepared baking sheet.
  6. In a separate large mixing bowl, combine the sliced peaches with the remaining pure maple syrup, tossing gently to ensure all peach slices are evenly coated. Arrange the peaches evenly onto the center of the dough, leaving approximately a one-inch border from the edge.
