Ingredients
Thumbprint Cookies
- 1/2 cup All Natural Almond Butter
- 1/2 cup Pure Maple Syrup
- 1 1/4 cup Fine Almond Flour
- 1/4 cup Raspberry-Beet Chia Seeds Jam* (recipe below)
Raspberry Beet Chia Seed Jam
- 1 heaping cup fresh or frozen raspberries
- 1 large or 2 small Love Beets
- ¼ cup fresh squeezed orange juice
- ¼ cup filtered water
- 1 TBSP fresh squeezed lemon juice
- ¼ cup white chia seeds
Instructions
- To make the Raspberry-Beet Chia Seed Jam, add all of the ingredients (except the chia seeds) to a high-speed blender. Blend everything until the mixture is completely smooth and uniform.
- Transfer the blended mixture to a saucepan and stir in the chia seeds thoroughly. Allow the mixture to sit for approximately 10 minutes; this will give the chia seeds time to absorb liquid and begin to gel, thickening the jam.
- Place the saucepan over medium heat and cook for 5-10 minutes, stirring frequently, until the jam consistency visibly thickens. Be careful not to let it burn.
- Once thickened, carefully dish the jam into clean glass mason jars. Allow it to cool completely at room temperature before refrigerating. The jam will continue to thicken as it chills and will be ready for use when cold.
- Preheat your oven to 350°F (175°C). Line 1-2 baking sheets with parchment paper. In a large mixing bowl, combine the maple syrup, almond butter, and almond flour. Mix thoroughly until all ingredients are well incorporated and form a sticky, cohesive dough.
- Cover the mixing bowl and transfer the dough to the refrigerator. Chill for approximately 30 minutes to allow the dough to firm up, which will make it much easier to handle.
- Once the dough has firmed up (you can test its consistency with a fork or spoon), use a cookie scoop to portion out about 1 1/2 tablespoon-sized balls of dough.
- Roll each portion of dough into a smooth ball using your hands. Place the balls about 2 inches apart on the prepared cookie sheets. Gently press your thumb into the center of each dough ball to create a deep indentation for the jam, forming a thumbprint. If your thumb starts to stick to the dough, slightly moisten it with a bit of filtered water. Fill each thumbprint with a heaping teaspoon of the prepared Raspberry-Beet Chia Seed Jam.
- Bake the cookies for 16-17 minutes. After baking, promptly remove them from the oven. The cookies may appear slightly underdone at this stage, but they will firm up beautifully as they cool on the baking sheet.
- Store any leftover cookies in an airtight container in the refrigerator for up to one week to maintain their freshness. For longer storage, these cookies can be frozen. The extra Raspberry-Beet Chia Seed Jam will also keep well in the fridge for up to one week.
