Description

4-ingredient no bake energy balls made with sunflower seed butter and dates! Naturally sweetened and perfect for meal prep snacking!


Ingredients

  • 1215 dates (~1 cup), pitted*
  • 34 TBSP No Sugar Added SunButter
  • 1 TBSP chia seeds
  • 2/3 cup gluten-free old-fashioned rolled oats


Instructions

  1. Pulse dates in a high speed blender or food processor until they form a paste like consistency.
  2. Add oats, chia seeds and sunbutter and pulse until combined. If they aren’t perfectly mixed, that’s OK!
  3. Scrape dough our of blender and place in a bowl in the refrigerator for about 10 minutes to set (optional, but recommended).
  4. Roll dough into 1-inch balls using your hands.
  5. Enjoy immediately or store in the refrigerator for up to one week.
  6. Freeze for long term storage.

Notes

If your dates are dry, soak them in warm water for 10 minutes, then drain before adding them to the recipe
