- 1 1/2 cups raw cashews (soaked for 4–6 hours or overnight, then drained)
- 1 cup unsweetened coconut or almond milk (full-fat canned coconut milk is recommended for extra creaminess)
- ~4 tsp loose leaf Rishi Organic Masala Chai Tea (or 2-3 chai tea bags)
- 1/3 cup pure maple syrup (or date paste for refined sugar-free)
- 1/4 cup cashew butter
- 1/2 tsp ground cinnamon
- 1/4 tsp ground ginger powder
- pinch of ground cardamom
- pinch of black pepper
- date caramel, for serving (optional)
Instructions
- Prepare Cashews: Soak your raw cashews overnight, or for 4-6 hours before you plan to blend. If you forget, a quick soak works too: place cashews in a bowl, cover with boiling water, and let them sit for 30 minutes. Drain thoroughly before use.
- Steep Chai Tea: Bring 3/4 cup of water to a boil. Steep the 4 teaspoons of loose leaf chai tea (or chai tea bags) in the boiling water for 10 minutes. Strain the tea leaves and set the concentrated chai tea aside to cool slightly to room temperature.
- Blend Ingredients: Add the drained cashews, the cooled chai tea, unsweetened coconut or almond milk, maple syrup, cashew butter, ground cinnamon, ginger powder, cardamom, and black pepper into a high-speed blender.
- Achieve Smoothness: Blend all ingredients until the mixture is completely smooth and creamy. Ensure there are no cashew chunks remaining; blend until it reaches a perfectly velvety consistency.
- Freeze & Churn (No-Churn Method): Pour the blended contents into a freezer-safe pan or container. Lay the container flat and transfer it to the freezer. To achieve the best no-churn texture, stir the mixture thoroughly with a spoon every hour for 6-8 hours. This helps prevent large ice crystals and creates a creamy, scoopable ice cream.
