For many, “Toast Tuesday” isn’t just a day of the week; it’s a sacred ritual, a delightful opportunity to experiment with flavors and textures. The moment the bread glows golden in the toaster, then *POP!*—a blank canvas awaits your inspired toppings.
And today, dear friends, your quest for extraordinary toast toppings ends here. I’m thrilled to share one of my all-time favorite culinary creations: Romesco Roasted Cauliflower Toasts. This recipe perfectly marries the earthy sweetness of tender, oven-roasted cauliflower with the bright, nutty, and incredibly creamy flavors of a homemade romesco sauce. It’s a pairing that transcends seasons, delivering a harmonious blend of vegetables, nuts, and aromatic herbs. Whether you’re a seasoned vegan or simply looking to incorporate more plant-based goodness into your diet, these toasts are a must-try. You bring the bread, and I’ll provide the foolproof recipe for a truly unforgettable toast experience.
The Essential Ingredients for Romesco Roasted Cauliflower Toast
If you haven’t yet discovered the magic of romesco sauce, prepare to be delighted – and possibly addicted! Originating from the Tarragona region of Catalonia, Spain, traditional romesco sauce is a robust and savory blend typically made with roasted tomatoes, garlic, almonds or hazelnuts, olive oil, and various spices like ñora peppers (or roasted red peppers). Its vibrant color and complex flavor profile make it an incredibly versatile condiment.
My version, however, takes a delightful shortcut without sacrificing any of that authentic taste. While many romesco recipes call for raw, soaked almonds to achieve that signature nutty creaminess, I’ve streamlined the process by incorporating one of my favorite nut butters, Nuttzo. This ingenious substitution not only simplifies the preparation but also adds a unique depth of flavor and velvety texture that’s absolutely divine. If Nuttzo isn’t available, feel free to use your favorite high-quality almond butter as a substitute. The key is finding a rich, unsweetened variety that complements the other ingredients.
To boost the vegetable content and enhance the fresh, bright notes, I’ve also included a cored tomato directly into the sauce. And for those aiming for a lighter, healthier option, this recipe is designed to be oil-free, allowing the natural flavors of the vegetables and nuts to truly shine. The result is an easy-to-make romesco that is bright, peppery, wonderfully nutty, and exquisitely creamy – a true game-changer for your culinary repertoire.
Creative Ways to Enjoy Your Leftover Romesco Sauce
One of the best things about making this Romesco Roasted Cauliflower Toast recipe is that you’re almost guaranteed to have leftover romesco sauce. And trust me when I say, this is an excellent problem to have! This versatile sauce is so incredibly delicious and adaptable that you’ll want to incorporate it into countless meals throughout the week. Its rich, tangy, and nutty profile makes it a fantastic addition to a variety of dishes, ensuring no drop goes to waste. Here are just a few ideas to inspire you:
- **As a Dip:** Serve it alongside a colorful array of raw vegetables like carrots, celery, bell peppers, or cucumber slices for a healthy and satisfying snack. It’s also phenomenal with roasted vegetables such as broccoli, asparagus, or even sweet potato wedges.
- **In Buddha Bowls or Salad Bowls:** Drizzle generous amounts over your favorite grain bowls or fresh salads to add a powerful punch of flavor and creamy texture. It pairs wonderfully with quinoa, brown rice, roasted chickpeas, and leafy greens.
- **Spread onto Crackers or Sandwiches:** Use it as a vibrant spread for your morning toast (beyond just this recipe!), crackers, or as a flavorful base for sandwiches and wraps. It adds an instant gourmet touch.
- **A Delicious Dressing for Fries:** Elevate your homemade fries by serving them with a side of romesco! It’s an incredible dipping sauce for my Oil-Free Yam Fries or Oil-Free Purple Sweet Potato Fries.
- **Paired with Veggie Scrambles:** Transform your breakfast or brunch by spooning some romesco over a savory veggie scramble. This is a personal favorite pairing of mine, adding a Mediterranean twist to a classic dish.
- **By the Spoonful:** And, of course, sometimes the best way to enjoy this delectable sauce is simply by the spoonful, straight from the jar! It’s that good.
Crafting Your Romesco Roasted Cauliflower Toasts: A Step-by-Step Guide
If you’re one of my lovely followers on Instagram, you’ll know my affection for toast runs deep, often inspiring a new #toasttuesday combination each week. The sheer versatility of toast led me to create a dedicated “Toast!” section on the blog, a testament to the endless possibilities this humble base offers. I truly love hearing your thoughts – do you want more toast recipes, or perhaps less? Your feedback helps shape the content I create!
Creating these delightful toast creations, however, often means taking a moment away from sharing them. The balance between cooking, photographing, and then actually sitting down to write and post can be a delightful struggle! But some recipes, like these Romesco Roasted Cauliflower Toasts, are simply too good not to share promptly.
The process begins with preparing your cauliflower. Roasting is key here, as it brings out a wonderful sweetness and caramelization that complements the romesco beautifully. Simply slice your cauliflower into ½-inch slabs – this ensures even cooking and a lovely texture. Drizzle lightly with avocado oil (or omit for an oil-free version) and season with Himalayan sea salt and black pepper. Roast until the cauliflower is tender in the middle and gorgeously golden brown around the edges, typically 30-35 minutes at 425°F.
While the cauliflower roasts, turn your attention to the star of the show: the romesco sauce. In a high-speed blender, combine the cored tomato, roasted red pepper (freshly roasted or from a jar), your chosen nut butter (Nuttzo or almond butter), garlic powder, unsweetened almond milk, red wine vinegar, and sweet paprika. A pinch of salt and pepper to taste is also essential. Blend until the sauce is luxuriously smooth and creamy. If you prefer a thinner consistency, add almond milk or water one tablespoon at a time until it reaches your desired texture, but remember, a thicker sauce holds better on toast without running!
Once both components are ready, it’s time to assemble your toasts. Begin with your favorite seeded bread, toasted to golden perfection. Spread a generous layer of the homemade romesco sauce, then artfully arrange the roasted cauliflower slabs. Finish with a handful of fresh basil or parsley for an aromatic touch, a handful of spinach for added freshness and nutrients, and a sprinkle of hemp hearts for a boost of healthy fats and protein. Serve immediately and savor every bite!
Versatile Serving Suggestions for Your Romesco Roasted Cauliflower Toasts
One of the many beauties of these Romesco Roasted Cauliflower Toasts is their incredible versatility, making them suitable for almost any occasion or craving. Enjoy them as a light yet satisfying lunch, a hearty entree alongside a simple salad, or a flavorful anytime snack that will keep you energized. The ingenious part is that both the romesco sauce and the roasted vegetables are equally delicious served warm or chilled, offering endless possibilities for enjoyment throughout the year.
During the warmer months, I particularly love assembling these toasts chilled and open-faced, creating a refreshing and elegant meal perfect for a picnic or a sunny patio lunch. The cool, creamy romesco contrasts beautifully with the tender cauliflower and fresh herbs. As the weather cools, I shift to a warmer preparation, often smashing the components together into a hearty sandwich, perfect for a cozy meal. The warmth enhances the savory notes of the romesco and makes for a truly comforting experience.
Feel free to customize this recipe to your palate and what’s in season. Experiment with different fresh herbs – while parsley and basil are my go-to choices, a sprinkle of fresh dill or cilantro could also add an interesting twist. Don’t stop at cauliflower either; if you’re feeling adventurous and already in a “toasty” mood, consider adding other roasted vegetables. Zucchini slices, thinly sliced red onion, or even roasted eggplant would be absolutely fantastic companions to the romesco and cauliflower, creating a dynamic and flavorful toast experience. Let your creativity flow and make these toasts truly your own!
Enjoy this delightful and healthy plant-based meal!

Description
Transform your toast into a gourmet, plant-based meal with this easy recipe! Featuring tender roasted cauliflower and a luscious, nut butter-based romesco sauce, these toasts are a wholesome and flavorful option for a light lunch, a satisfying snack, or an elegant appetizer.
Ingredients
Roasted Cauliflower
- 1 small head of cauliflower
- 2 tsp avocado oil (optional, for oil-free version)
- Himalayan sea salt, to taste
- Black pepper, to taste
Romesco Sauce
- 1 large tomato, cored
- 1 large or 2 small roasted red pepper (jarred or freshly roasted)
- ¼ cup Nuttzo (or your favorite unsweetened almond butter)
- 1/4 tsp garlic powder
- 2 TBSP unsweetened almond milk (plus more for thinning)
- 1 TBSP red wine vinegar
- 2 tsp sweet paprika
- Himalayan sea salt, to taste
- Black pepper, to taste
For serving
- Seeded bread (e.g., sourdough, whole grain, or gluten-free bread), toasted
- Handful of fresh basil or parsley, chopped
- Handful of fresh spinach leaves
- Hemp hearts, for garnish
Instructions
- Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.
- Prepare the cauliflower: Carefully slice the small head of cauliflower into ½-inch slabs. Arrange these slices in a single layer on the prepared baking sheet.
- Roast the cauliflower: Drizzle the cauliflower slabs with avocado oil, if using (you can omit this step for an oil-free preparation). Season lightly with a pinch of Himalayan sea salt and black pepper. Bake for 30 to 35 minutes, or until the cauliflower is beautifully tender in the middle and golden-brown and slightly crispy around the edges.
- Prepare the romesco sauce: While the cauliflower is roasting, combine all the romesco sauce ingredients in a high-speed blender: cored tomato, roasted red pepper, nut butter (Nuttzo or almond butter), garlic powder, almond milk, red wine vinegar, sweet paprika, and a pinch of salt and pepper.
- Blend until smooth: Process the ingredients until the sauce is completely smooth and creamy. Scrape down the sides of the blender as needed to ensure everything is incorporated.
- Adjust consistency: For a thinner sauce, gradually add more unsweetened almond milk or water, one tablespoon at a time, blending after each addition until your desired consistency is reached. Remember, a slightly thicker sauce is ideal for spreading on toast without it running off.
- Assemble the toasts: Once the cauliflower is roasted and the romesco sauce is ready, toast your chosen bread to your preferred crispness. Spread a generous layer of the romesco sauce onto each slice of toasted bread. Top with the warm or chilled roasted cauliflower slabs, a handful of fresh basil or parsley, a few fresh spinach leaves, and a sprinkle of hemp hearts for added texture and nutrition. Serve immediately.
- Storage: Store any leftover romesco sauce in an airtight container in the refrigerator for up to two weeks. It’s fantastic for meal prep and can be used in many other dishes!
