Tofu Sheet Pan Meal

“Cheezy” Miso Tahini Sauce

  • 1 TBSP miso paste
  • 3 TBSP tahini
  • 2 TBSP apple cider vinegar
  • 1 tsp maple syrup (optional)
  • 1/4 tsp garlic powder
  • 2 TBSP nutritional yeast
  • ¼ cup warm filtered water + more as needed to reach desired consistency
  • black pepper, to taste
  • Himalayan sea salt, to taste

For serving

  • cooked quinoa
  • sprinkle of hemp hearts


Instructions

  1. Preheat oven to 400°F (200°C) and line two large baking sheets with parchment paper to prevent sticking and aid in easy cleanup.
  2. Carefully divide the prepared vegetables (sliced red onion, diced sweet potato, diced yellow bell pepper, broccoli florets, and sliced button mushrooms) and cubed extra-firm tofu between the two prepared baking sheets. Drizzle each sheet evenly with 1 teaspoon of avocado oil. Sprinkle both sheets generously with dried rosemary and dried thyme, then toss thoroughly with your hands to ensure all ingredients are evenly coated with the oil and seasonings. Season with black pepper and Himalayan sea salt to taste.
  3. Bake the sheets for 25-30 minutes, or until the sweet potatoes are fork-tender and the edges of the tofu begin to turn a beautiful golden brown and crisp up. For optimal, even baking and browning, remember to rotate the baking sheets halfway through the cooking time. This ensures all sides of the vegetables and tofu get exposed to the heat.
