This beloved cookie recipe is a thoughtful adaptation of my popular Flourless Cranberry Chocolate Chip Cookies. The core template for these recipes is fantastic because it prioritizes whole, nourishing foods, ensuring that every ingredient serves a purpose in both flavor and health. We steer clear of gluten, refined sugars, and added oils, proving that you don’t need to compromise on taste or texture to enjoy a treat that feels good to eat. It’s all about creating wholesome indulgences that you can feel great about sharing with your loved ones.
Essential Ingredients for Your Salted Cashew Butter Chocolate Chunk Cookies
Crafting these delectable cookies requires a concise list of wholesome ingredients, making them an excellent choice for a quick pantry bake. Here’s what you’ll need to gather:
- Ground Flaxseed: This is our magical vegan egg replacer, creating a “flax egg” that binds the dough together and adds healthy omega-3s.
- Almond Flour: The star of our grain-free base, providing a tender crumb and a subtle nutty flavor. It’s essential for achieving that perfect moist texture without gluten.
- Cashew Butter: The creamy foundation of these cookies. Its mild, naturally sweet flavor allows the chocolate to truly shine, contributing to a wonderfully rich and chewy texture.
- Maple Syrup: Our natural sweetener of choice. It offers a distinct, warm flavor that complements the nuts and chocolate beautifully, all while keeping the cookies free from refined sugars.
- Hu Kitchen Salty Dark Chocolate Bar: This is where the “salty dark chocolate chunks” come into play. The high-quality, perfectly balanced sweet and salty profile of this particular chocolate bar is a game-changer.
- Baking Powder: A crucial leavening agent that helps our cookies rise and achieve a light, airy texture.
- Himalayan Sea Salt: A finishing touch that enhances all the flavors, especially the chocolate, and boosts that incredible sweet-and-salty dynamic.
That’s truly all it takes to create these extraordinary cookies. Each ingredient plays a vital role in delivering a flavor and texture profile that is both comforting and sophisticated.
Crafting Your Perfect Cashew Butter Chocolate Chunk Cookies: A Step-by-Step Guide
The beauty of this recipe lies not only in its simple ingredients but also in its straightforward preparation. The cookie batter forms a luscious base of rich cashew butter and fine almond flour, naturally sweetened by the amber notes of maple syrup. This combination yields a dough that’s both easy to work with and incredibly flavorful.
The Power of Cashew Butter
While the recipe calls specifically for cashew butter, and I wholeheartedly recommend it for its uniquely subtle taste that truly lets the chocolate be the star, don’t despair if you don’t have it on hand. You can certainly achieve similar delicious results by substituting another creamy nut butter, such as almond butter or even a high-quality peanut butter. Just keep in mind that other nut butters might impart a stronger flavor, subtly altering the final taste profile of your cookies. However, the creamy texture will remain, ensuring a moist and satisfying bite. For the best flavor experience, however, do grab some cashew butter if you can!
Almond Flour Alternatives
Similarly, the almond flour is key to the intense moisture and tender crumb of these grain-free cookies. It’s a fantastic gluten-free alternative that adds a delicate nutty essence. If almond flour isn’t an option, oat flour can be used as an alternative, though it might result in a slightly different texture – perhaps a bit denser. Always ensure your oat flour is certified gluten-free if catering to specific dietary needs.
The Art of Mixing
The process itself is a breeze. You’ll start by preparing your flax egg, allowing it a few minutes to gel and become an effective binder. Then, simply combine the remaining wet and dry ingredients. Mix everything until just combined, being careful not to overmix, which can lead to tougher cookies. Finally, gently fold in those glorious chocolate chunks, ensuring they are evenly distributed throughout the dough. The simplicity of these steps means you’ll be enjoying warm, freshly baked cookies in no time!
The Perfect Chocolate Bar: Achieving the Sweet & Salty Balance
For many years, the concept of simultaneously craving something sweet and something salty didn’t quite resonate with me. That classic scenario of alternating between a bag of chips and a chocolate chip cookie seemed a bit perplexing. However, once you truly experience these two flavor profiles expertly combined in a single, harmonious bite, it all makes perfect sense. The synergy is undeniable, and it’s precisely what makes these cookies so addictive.
This is where the Hu Kitchen Dark Salty Bar enters the stage as an absolute star. This chocolate bar is, quite simply, perfect in its salty sweetness. It’s crafted with high-quality ingredients, ensuring a rich dark cacao flavor that is beautifully accentuated by just a hint of sea salt. This subtle saltiness doesn’t just add a contrasting flavor; it cleverly draws out and enhances the inherent sweetness of the chocolate, creating a complex and incredibly satisfying taste experience that will leave you wanting more.
To prepare it for this recipe, I highly recommend chopping the chocolate into substantial, rustic chunks. These larger pieces are not only visually appealing, creating those beautiful, molten pools of chocolate within your cookies, but they also provide bursts of intense chocolate flavor and texture with every bite. Watch them transform in the oven into delightful, rough rectangles of gooey deliciousness, contributing immensely to the overall appeal of these exquisite cookies.
Elevate Your Cookies: Creative Mix-Ins and Storage Solutions
While these Salted Cashew Butter Chocolate Chunk Cookies are absolutely divine in their original form, the recipe provides a fantastic canvas for customization. I tend to keep the mix-ins simple to let the star flavors shine, but don’t hesitate to experiment! For those who love an extra layer of texture and crunch, these cookies would be magnificent with the addition of crushed walnuts, pecans, or your favorite nut of choice. A handful of toasted coconut flakes could also add a tropical twist, or perhaps a sprinkle of cinnamon for a warming spice note.
Beyond deliciousness, these cookies are also incredibly convenient when it comes to storage, making them perfect for meal prepping your treats or ensuring you always have a healthier option on hand. They store exceptionally well at room temperature in an airtight container for several days, maintaining their moist and chewy texture. For longer-term enjoyment, you have a couple of excellent options: refrigerate them for up to a week, or freeze them for even extended freshness.
If you’re anything like me, the idea of having a stash of these cookies in the freezer is incredibly appealing. They thaw beautifully and can be gently rewarmed for that fresh-from-the-oven experience. The real challenge, of course, is managing to set a few aside and resist the temptation to devour them all in one sitting! Whether you enjoy them fresh or stored, these cookies are a reliable and delicious treat.
Serving Suggestions & Enjoying Your Salted Cashew Butter Chocolate Chunk Cookies
These Salted Cashew Butter Chocolate Chunk Cookies are more than just a recipe; they’re an invitation to enjoy a simple, everyday moment of bliss. Designed to be an effortlessly delicious treat, they fit perfectly into any occasion, whether it’s a quiet afternoon snack or a delightful dessert for a gathering of friends and family. Their universally appealing flavor profile ensures they’re a hit with any crowd, making them your go-to recipe for spontaneous cravings or planned indulgences.
For the ultimate experience, try enjoying them fresh from the oven, still warm and slightly melty, paired with a tall, frosty glass of almond milk. The cool, creamy milk perfectly contrasts the warm, chewy cookie, enhancing every nuanced flavor. That signature sweet and salty combination is incredibly powerful, making it truly difficult (if not impossible!) to stop at just one. Each bite beckons for another, promising a satisfying balance of flavors that tantalizes the palate.
For an extra touch of gourmet appeal and an intensified flavor boost, consider topping your cookie dough balls with an additional sprinkle of Himalayan sea salt flakes and a few more dark chocolate chunks just before they go into the oven. This not only enhances the visual aesthetics, creating a professional bakery look, but also guarantees an extra burst of salty-sweet goodness with every bite. Happy baking, and even happier eating!

Description
Easy grain-free Salted Cashew Butter Chocolate Chunk Cookies with salty dark chocolate chunks. Ready with 6 ingredients in 15 minutes!
Ingredients
- 1 flax egg (1 TBSP flaxseed + 3 TBSP filtered water)
- 1 1/4 cup almond flour (can sub 1/4 cup for vanilla protein powder, if desired)
- 1 cup oil-free creamy cashew butter
- generous 1/3 cup maple syrup
- 1 heaping cup of Hu Kitchen Salty Dark Chocolate bar, chopped
- 1 tsp baking powder
- Himalayan sea salt flakes, for topping
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- In a medium-sized mixing bowl, whisk together your ground flaxseed and filtered water to create your flax egg. Allow it to sit for 5-10 minutes until it thickens and gels, which is essential for binding the cookie dough.
- Once the flax egg has gelled, add the almond flour, baking powder, creamy cashew butter, and maple syrup to the same bowl. Mix everything thoroughly until all the ingredients are well combined and a cohesive dough forms.
- Gently fold in the chopped Hu Kitchen Salty Dark Chocolate chunks. Mix until the chocolate is evenly distributed throughout the dough, ensuring every cookie gets a generous portion.
- (OPTIONAL) For a slightly firmer dough that is easier to handle and helps prevent excessive spreading during baking, place the bowl in the refrigerator for 30 minutes. If you’re short on time, you can often skip this step with success, as the dough is usually workable immediately.
- Using a cookie scoop (approximately 1.5-2 TBS per scoop) or a spoon, portion the dough and roll it into balls. Place them onto your prepared parchment-lined baking sheet. Gently flatten each cookie ball slightly with your hands to encourage even baking. If desired, press additional chocolate chunks and a pinch of Himalayan sea salt flakes onto the tops of the flattened cookies for extra flavor and visual appeal.
- Bake the cookies for 14-15 minutes, or until their bottoms are golden brown and the edges are just beginning to lightly brown. The centers may still appear soft and slightly undercooked when first removed from the oven, but they will firm up beautifully as they cool.
- Carefully remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Store any leftover cookies in an airtight container in the refrigerator for 5-7 days, or freeze them for longer-term storage to enjoy at your leisure.
