Description
This quick and easy 10-minute vegetable scramble is bursting with flavor from a thoughtful blend of herbs and spices. Ingredients
- drizzle of avocado oil
- 1/2 small white onion, diced
- 2 cups diced vegetables of choice: bell pepper, asparagus, mushrooms, shredded carrot, zucchini, broccoli, asparagus, etc.
- big handful leafy greens (optional, e.g., spinach, kale)
- 1/4 tsp garlic powder
- 1/4 tsp paprika (smoked or sweet)
- 1/4 tsp turmeric
- 1 TBSP nutritional yeast
- 2 scallion, thinly sliced
- Himalayan sea salt, to taste
- black pepper, to taste
- 1–2 Hilary’s Spicy Veggie Sausage Patty
- Optional for serving: sliced avocado, chopped cilantro, extra green onion, hummus, hot sauce, vegan sour cream, toasted seeds, etc.
Instructions
- Spray a nonstick pan with avocado oil and heat it over medium heat on the stovetop until shimmering.
- Once the pan is warm, add the diced onions and garlic powder. Cook, stirring occasionally, until the onions become translucent and soft, which should take approximately 5 minutes.
- Next, add your chosen diced vegetables to the pan along with a pinch of Himalayan sea salt and freshly ground black pepper to taste.
- Continue to heat the vegetables for 8-10 minutes, stirring them frequently to ensure even cooking, until they are tender when pierced with a fork.
- During the last few minutes of sautéing, incorporate the paprika, turmeric, and nutritional yeast. If using, also add the large handful of leafy greens (like spinach or kale) and the diced scallions. Reduce the heat to medium-low, cover the pan with a lid, and cook for 2-3 minutes, or until the leafy greens have wilted.
- Before serving, gently stir the mixture to ensure the nutritional yeast and spices are thoroughly combined and distributed throughout the vegetables.
