Why You’ll Adore This Plant-Based Bolognese

Prepare to fall in love with this Chickpea & Hemp Heart Bolognese. It’s a symphony of flavors and textures: deeply tomatoey with a hint of savory “cheesiness” (thanks to nutritional yeast or vegan parmesan), and a satisfying chunkiness from the chickpeas, perfectly complemented by the subtle nuttiness of hemp hearts. I recently shared a sneak peek on Instagram, and the excitement for this recipe was palpable! I’m thrilled to finally share all the details with you, knowing you’ll find it as delightful as I do.

The Power of Chickpeas in Bolognese

Chickpeas, also known as garbanzo beans, are truly the stars of this plant-based bolognese. When prepared correctly, their firm yet creamy texture offers a fantastic substitute for ground meat, providing that satisfying chewiness you’d expect from a traditional bolognese. Beyond their textural appeal, chickpeas are nutritional powerhouses. They are rich in plant-based protein, essential for muscle repair and growth, and packed with dietary fiber, which aids digestion, promotes satiety, and helps stabilize blood sugar levels. By incorporating chickpeas, we’re not just creating a delicious sauce; we’re crafting a meal that fuels your body with sustained energy and wholesome goodness. Their mild flavor also makes them an excellent canvas for absorbing the rich Italian herbs and tomato flavors of the sauce, ensuring every bite is bursting with taste.

Hemp Hearts: A Tiny Ingredient with Big Benefits

Hemp hearts are one of my absolute favorite superfood ingredients, and I always keep a bag stocked in my fridge to sprinkle over salads, oatmeal, and, as you’ll see, into savory sauces! These tiny, shelled seeds are incredibly nutritious, offering a complete protein source, meaning they contain all nine essential amino acids. They are also loaded with healthy omega-3 and omega-6 fatty acids in an ideal ratio, which are crucial for heart health, brain function, and reducing inflammation. In this bolognese, hemp hearts don’t just add a nutritional boost; they subtly melt into the chickpea sauce, contributing a delicate, nutty flavor that beautifully complements the sweetness of the white sweet potato noodles and the robust chickpeas. If you don’t have hemp hearts readily available, don’t worry! You can either omit them entirely from the recipe or substitute them with very finely chopped walnuts or sunflower seeds for a similar textural and nutty profile, though the nutritional benefits will vary slightly.

Discovering White Sweet Potato Noodles

Have you ever had the pleasure of trying white sweet potato noodles before? I hadn’t, until Cece’s Veggie Noodles Co. introduced me to this absolute game-changer. These delightful spirals instantly brought a new dimension of deliciousness into my life, revealing just what I’d been missing in my healthy eating journey! Unlike their orange counterparts, white sweet potatoes possess a milder sweetness and a slightly firmer texture, making them an ideal base for absorbing rich, savory Italian flavors. Their neutral color also makes them a fun addition to this dish; if you’re not looking too closely, they can easily pass for “real noodles,” providing a pleasant surprise to unsuspecting guests.

The Benefits of a Gluten-Free & Grain-Free Alternative

Beyond their unique taste and appearance, white sweet potato spirals offer fantastic health benefits, especially for those seeking gluten-free and grain-free pasta alternatives. They are naturally packed with essential vitamins like Vitamin C and B6, as well as minerals such as potassium and manganese. Furthermore, they provide a good amount of dietary fiber, contributing to digestive health and prolonged satiety. This makes them a much lighter yet equally satisfying option compared to traditional wheat pasta, perfect for anyone looking to reduce their carb intake or simply incorporate more nutrient-dense vegetables into their diet without sacrificing the joy of a comforting pasta bowl.

Cooking Your Sweet Potato Spirals to Perfection

For this recipe, I recommend a simple method of boiling the sweet potato spirals, much like you would regular pasta, until they reach your desired tenderness. Four minutes typically yields an al dente bite, while five minutes results in a softer, more traditional noodle texture. However, if you’re looking for an alternative and prefer a crispier spiral, you can absolutely try sautéing them in a pan with a touch of olive oil. This method brings out a different kind of sweetness and creates a lovely caramelized texture that is equally delicious. Experiment with both techniques to find your personal favorite!

Where to Find and How to Adapt

If you’re having trouble locating Cece’s Veggie Noodle Co. White Sweet Potato Spirals at your local grocery store, fear not! You have several excellent options. Many grocery stores now carry various pre-spiralized vegetable noodles, or you can easily spiralize your own white sweet potatoes using a simple hand-held spiralizer or a countertop model. This bolognese is incredibly versatile and tastes fantastic over any veggie noodle – zucchini noodles, carrot spirals, or even traditional whole-wheat or gluten-free pasta if you prefer. For a truly unique and satisfying twist, I highly recommend dolloping this flavorful bolognese into a perfectly baked sweet potato. It offers a different texture and a wonderful depth of flavor, making it a complete and wholesome meal. Description

This protein-packed chickpea and hemp heart bolognese is a game-changer for plant-based pasta nights. Served with naturally gluten-free and grain-free white sweet potato noodles, it’s a satisfying, wholesome, and flavor-rich meal that comes together quickly.

Ingredients

  • 1 15-oz. can garbanzo beans, drained, rinsed and patted dry
  • avocado oil spray
  • 1/4 cup hemp hearts
  • 1 15-oz can tomato sauce or strained tomatoes
  • 1 TBSP dried or fresh oregano
  • pinch Himalayan sea salt
  • 1/2 tsp garlic powder
  • 1 TBSP vegan parmesan cheese, plus more to taste
  • 1 package Cece’s Veggie Noodles Co. White Sweet Potato Spirals

For serving

  • vegan parmesan
  • fresh basil
  • hemp hearts

Instructions

  1. Spray a large saucepan with avocado oil spray and heat over medium-high heat. Ensure the pan is adequately hot to achieve crispy chickpeas.
  2. In a mixing bowl, combine the rinsed and thoroughly dried chickpeas with oregano, Himalayan sea salt, garlic powder, hemp hearts, and vegan parmesan cheese. Toss well to ensure all chickpeas are evenly coated with the seasonings. This step is crucial for building flavor and texture.
  3. Add the seasoned chickpeas to the preheated pan and cook for 8-10 minutes, stirring occasionally, until they become deliciously crispy and turn a light golden brown. The crispier they are, the more “meat-like” texture they’ll impart to the bolognese.
  4. Reduce the heat to medium-low. Carefully pour in the tomato sauce and add a bit more vegan parmesan cheese. Stir thoroughly to combine all the ingredients, ensuring the chickpeas are well coated in the rich tomato base.
  5. Bring the mixture to a gentle simmer over medium-low heat. Once simmering, reduce the heat to low and continue to cook for about 5-10 minutes, stirring frequently. This allows the flavors to meld beautifully and the sauce to thicken to a perfect bolognese consistency.
  6. Taste the sauce and adjust the seasonings as needed. Feel free to add more oregano for an extra aromatic touch, more vegan parmesan for deeper umami, or additional garlic powder to suit your personal preference. Don’t be shy – make it perfect for your palate!
  7. While the sauce simmers, prepare your white sweet potato noodles. Bring a large pot of salted water to a rolling boil. Add the white sweet potato spirals and cook for 4-5 minutes. For an al dente texture, cook for 4 minutes; for more tender noodles, extend to 5 minutes. Immediately drain the noodles and set them aside to prevent overcooking.
  8. To serve, arrange the cooked white sweet potato spirals on a pasta plate or in a bowl. Generously spoon the warm chickpea & hemp heart bolognese over the top.
  9. Garnish with optional toppings such as extra vegan parmesan, fresh basil leaves for a burst of freshness, and a sprinkle of additional hemp hearts for texture and added nutrition.
  10. Store any leftover bolognese and sweet potato spirals separately in airtight containers in the refrigerator for up to 3-4 days. Reheat gently on the stovetop or in the microwave before serving to maintain optimal texture and flavor.
