  • 1 jar Eden Foods Organic Sauerkraut
  • 1 large apple, cored and sliced
  • 1 small yellow onion, sliced 

For serving

  • Minced fresh herbs (like parsley)


Instructions

  1. In a small bowl, mix the ground flaxseed and water to create your flax egg. Set aside for 5 minutes to allow the mixture to gel.
  2. Add the oats and walnuts to a high speed blender or food processor and pulse until you have a fine meal. Add in the flax egg, white beans, white onion, garlic powder, tomato paste, smoked paprika, Italian seasoning, sea salt, and cumin. Process until it’s well combined and thick. If the mixture is too sticky, add a bit more oats. Transfer the mixture to a bowl and move it to the refrigerator to chill for ~30 minutes. This will make the bratwurst easier to form later.
  3. Once the mixture is chilled, use a ⅓ cup measuring cup to form 6-7 oblong sausage shapes with your hands. If the mixture sticks to your hands, try using plastic wrap or parchment paper to shape them. Place the bratwurst on a large plate lined with parchment paper.
  4. Add the olive oil to a large skillet over medium heat. Once it’s warm, carefully transfer the bratwurst to the pan and fry them for ~10 minutes, alternating position frequently so all sides get browned. The bratwurst will be delicate, so be gentle with them when flipping and moving!
  5. Remove the cooked bratwurst from the pan and set them aside. Add another drizzle of olive oil to the pan if it’s dry; otherwise, if there’s still oil remaining from the bratwurst, no need to add more. Place the pan back over medium high heat.
