There’s a distinct shift in the air, isn’t there? Just this morning, I stepped out at 7 AM, still clinging to summer shorts, only to be met by a brisk 60-degree breeze. The immediate instinct? To jump into the car and crank up the heat and seat warmers – because how else do you truly embrace September mornings? It’s official: fall is gently, yet undeniably, making its presence known here in Virginia. The trees are beginning to wear their brilliant cloaks of crimson and gold, and a pleasant chill now accompanies both sunrise and sunset.

With the first “official” day of autumn just around the corner, my mind is already painting pictures in shades of sepia, burnt orange, and deep ruby. When I envision fall produce, my thoughts immediately turn to the earthy, vibrant beauty of root vegetables. But what if we could enjoy these autumnal gems in an unexpected, delightful form? How about root veggies in crunchy chip form, integrated into a fresh, satisfying salad?

You are absolutely going to adore this Root Veggie Chip Arugula Salad. It’s a beautifully balanced dish, light enough for an autumn lunch, yet substantial enough to serve as an exciting side. Have you ever considered adding crunchy vegetable chips directly into your salad? It might sound unconventional, but trust me, it’s a revelation. Essential Ingredients for Your Vibrant Root Veggie Salad

The beauty of this salad lies in its simplicity and the quality of its core components. You don’t need a lengthy list of obscure items to create something truly special. Instead, we focus on a few key ingredients that deliver big on flavor and texture. Here’s a closer look at what you’ll need to assemble this magnificent autumn salad:

  • Fresh Arugula: The foundation of our salad, arugula brings a wonderful peppery, slightly bitter note that cuts through the richness of the other ingredients. Choose fresh, vibrant leaves for the best flavor and texture. A giant handful is usually a good starting point for a single serving.
  • Crumbled Cashew Cheese: This adds a delightful creaminess and a tangy, savory counterpoint to the sweetness of the onions and chips. You can opt for your favorite store-bought vegan cashew cheese or easily make your own if you have time. Crumbled, it distributes beautifully throughout the salad, ensuring a burst of flavor in every bite.
  • Bare Snacks Beet Chips: These ruby-red chips are not just visually stunning; they bring an earthy sweetness and an incredible crisp texture. Bare Snacks are a fantastic choice because they typically contain just two ingredients: the vegetable itself and sea salt, making them a wonderfully clean and healthy option.
  • Bare Snacks Sweet Potato Chips: Complementing the beet chips, sweet potato chips offer another layer of natural sweetness and a slightly different texture, along with a beautiful golden hue. Like their beet counterparts, Bare Snacks sweet potato chips are minimally processed and provide a satisfying crunch that makes this salad truly unique.
  • Perfectly Caramelized Onions: These are the unsung heroes of the salad, adding a profound depth of savory-sweet flavor and a soft, yielding texture that contrasts beautifully with the crisp chips. While they require a little baking time, their rich umami taste is absolutely worth the effort and transforms the entire dish.
  • Your Choice of Dressing: The dressing allows for personalization. A simple drizzle of high-quality cold-pressed avocado oil and balsamic vinegar is always a winner. Alternatively, an oil-free lemon-tahini dressing can add a creamy, nutty zing. Choose what best suits your palate!

That’s truly all it takes! With these simple yet powerful ingredients, you’re set to create a salad that’s anything but ordinary.

The Magic of Bare Snacks Veggie Chips in Your Salad

For this Root Veggie Chip Arugula Salad, the choice of chips makes a significant difference. Bare Snacks Beet Chips and Sweet Potato Chips are truly exceptional, and here’s why they shine in this recipe. They offer the perfect blend of sweet and salty notes, deriving natural sweetness from the root vegetables themselves and a savory kick from the sea salt. This balance is crucial for a harmonious salad, especially when paired with the deep sweetness of caramelized onions and the savory tang of cashew cheese.

One of the aspects I appreciate most about Bare Snacks is their commitment to simplicity. You’ll find these chips are made with just two ingredients: the root vegetable and a touch of sea salt. This minimalist approach means you’re getting pure, unadulterated flavor and crunch, without any unnecessary additives or oils. They’re baked, not fried, which makes them a healthier alternative to traditional potato chips and a wonderful way to add nutrient-dense vegetables to your meal.

I always keep a stash of these in my pantry. They’re incredibly versatile, perfect for snacking on their own, or as a quick, healthy addition to meals. In this salad, they’re not just a garnish; they’re an integral component, contributing both flavor and that much-needed textural excitement. When you’re short on fresh vegetables or pressed for time, but still crave a taste of autumn, these chips are your secret weapon for a truly satisfying and seasonally inspired bowl.

  • Vibrant Side Dish: Serve it alongside your favorite autumn entrees, such as a roasted vegetable tart, a hearty lentil soup, or a baked sweet potato. Its bright flavors provide a refreshing contrast to richer dishes.
  • Boost the Protein: To transform this into a more substantial meal, consider adding extra plant-based protein. Roasted chickpeas, seasoned lentils, crumbled tempeh, or grilled tofu cubes would all be excellent additions, providing sustained energy and making it a complete entree.
  • Choose Your Dressing Wisely: For dressing, a simple cold-pressed avocado oil and balsamic vinegar combination is always a classic and allows the natural flavors of the ingredients to shine. For a creamier, richer option, an oil-free lemon-tahini dressing works beautifully, adding a nutty and bright element. Experiment to find your favorite!
  • Timely Dressing for Maximum Crunch: A crucial tip for enjoying this salad to its fullest: dress it right before serving. This prevents the delightful root veggie chips from becoming soggy, ensuring you get that perfect crisp texture with every bite. For this reason, it’s best to prepare this salad in single servings and savor it immediately. If you’re meal prepping, keep the dressing and chips separate until you’re ready to eat.
  • Add More Fall Flair: Feel free to add other seasonal ingredients! Thinly sliced apples or pears can add extra sweetness and crunch. Toasted pecans or walnuts can introduce a nutty depth. A sprinkle of dried cranberries could offer a tart counterpoint.

No matter how you choose to enjoy it, this Root Veggie Chip Arugula Salad is sure to bring a smile to your face and a burst of autumn goodness to your plate. Enjoy every crunchy, creamy, and flavorful bite!
