The past few weeks have been a delightful prelude to spring, offering *beautiful* weather that’s almost too good to be true. This seductive sunshine always tempts me to pack away my winter gear long before the calendar officially flips to March. It’s the kind of warmth that beckons you outdoors, urging you to embrace adventure and fresh air.

Just last weekend, I embarked on my very first hike of 2022, joining a wonderful group of friends. We seized the opportunity presented by the mild weather and tackled the challenging Strickler Knob Trail in the stunning Shenandoah Area. This 11-mile out-and-back route proved to be one of the longest and toughest hikes I’ve done in quite some time, featuring invigorating rock scrambles and a truly butt-kicking ascent towards the summit. Every muscle ached, but every step was worth it.

The reward at the top was an absolutely breathtaking 360-degree panoramic view overlooking Luray, Virginia. Standing there, surrounded by nature’s grandeur, I realized just how much I had been craving an outdoor adventure. Breathing in the crisp, fresh air and settling into the rhythmic pattern of my footsteps felt incredibly grounding. It’s moments like these that truly recharge the soul.

I feel immense gratitude for my fantastic group of friends who share my passion for exploring the world. And equally, I’m thankful for this online space where I can continue to explore and share my love for delicious, plant-based eats with all of you. It’s this continuous pursuit of vitality – both through outdoor activity and nutritious food – that keeps me inspired.

Do you ever dream of having a home filled with lush green plants, just like those captivating, minimalist photos you scroll past on Instagram? I certainly do! So, when a dear friend surprised me with some beautiful home-grown mint at our book club brunch last weekend, I accepted it with a mix of genuine excitement and a determined vow. I promised myself two things: I would absolutely use this fresh, aromatic mint in a delicious recipe, and I would, by golly, keep the plant alive!
