  • 1/2 cup natural almond butter
  • 2 TBSP pure maple syrup
  • 1/4 cup (~1 scoop) vanilla protein powder (or almond flour/coconut flour)
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup chopped sprouted walnuts
  • 1/4 cup dried goji berries
  • 1/4 cup cacao nibs
  • 2 squares Hu Kitchen Almond Butter & Puffed Quinoa Chocolate bar, chopped (optional, for mix-ins)
  • 1/2 bar Hu Kitchen Simple Dark Chocolate bar, melted (for drizzle)


Instructions

  1. Prepare a 9×6 inch baking dish by lining it with parchment paper or lightly greasing it with coconut oil for easy bar removal.

  3. In a mixing bowl, combine the melted coconut oil (or softened coconut butter) with the natural almond butter, pure maple syrup, and protein powder. Stir thoroughly until all ingredients are well-combined and the mixture is smooth.
  4. Fold in the unsweetened coconut flakes, goji berries, cacao nibs, chopped walnuts, and the optional chopped Hu Kitchen chocolate bar. Mix until all superfood additions are evenly coated in the sticky batter. The mixture will be stiff.
  5. Press the stiff batter evenly into the parchment-lined baking dish. Use your hands or the back of a spatula to ensure a compact and uniform layer.
