Description

Peanut Butter Chocolate Chip Oatmeal Cookies made with natural peanut butter, dark chocolate chips, and hearty oats for the best texture and taste.


Ingredients

  • 2 flax eggs (2 TBSP ground flaxseed + 5 TBSP filtered water)
  • 1 cup natural peanut butter
  • 2/3 cup unrefined coconut sugar
  • ¾ cup Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats
  • ½ tsp baking powder
  • Heaping ½ cup dark chocolate chips + more for topping


Instructions

  1. Preheat the oven to 350°F and line a baking pan with parchment paper.
  2. Mix up your flax egg in a large mixing and set aside to gel for 5 minutes.
  3. Add in the peanut butter and coconut sugar and mix until the batter is well combined. Next, add in the oats and baking powder and stir again until you have a smooth batter.
  4. Fold in the dark chocolate chips and mix until they’re evenly distributed.
  5. Drop 1 Tablespoon balls onto a parchment-covered cookie sheet and flatten slightly with your hands. Add more chocolate chips on top, if desired.
  6. Bake the cookies for 10-12 minutes, or until they’re golden brown underneath. Cookies will appear underdone when first removed from the oven. This is totally normal! They will set up as they cool.Allow the cookies to cool slightly before serving.
  7. Store leftover cookies in an airtight container in the refrigerator for up to one week and freeze for long-term storage.
