Ingredients
BBQ Chickpeas
- 1 heaping TBSP tomato paste
- 2 tsp tamari lite
- 1 TBSP maple syrup
- 1 15-oz can chickpeas, drained and rinsed
- avocado oil spray
- 1–2 TBSP nutritional yeast
BBQ Chickpea Salad
- 6 cups mixed salad greens
- 1/4 small red onion, thinly sliced
- 1/2 pint cherry tomatoes, sliced in half
- 1/2 cup shredded carrots
- 1 avocado, diced
Hemp Heart Ranch
- 1/2 cup hemp hearts
- 1/2 cup filtered water
- 2 TBSP nutritional yeast
- 2 TBSP fresh lemon juice
- 1/4 tsp garlic powder
- black pepper, to taste
- 1/4 tsp Himalayan sea salt
Instructions
- Spray a nonstick skillet with avocado oil spray and heat on the stovetop over medium-high heat.
- Once the skillet is warm, add in the chickpeas and cook them for 5-6 minutes, stirring occasionally, until they are lightly browned and start to become crispy.
- While the chickpeas are cooking, prepare your homemade BBQ sauce by whisking together the tomato paste, tamari lite, and maple syrup in a small bowl until well combined.
- Once the chickpeas are nicely browned and crispy, pour the prepared BBQ sauce over them and stir thoroughly to ensure every chickpea is well coated. Reduce the heat to low-medium and continue to cook for 3-4 more minutes, stirring frequently, until most of the sauce is absorbed and the chickpeas are sticky and caramelized.
- Sprinkle the nutritional yeast over the cooked BBQ chickpeas and gently mix it in. Then, cover the skillet, turn off the heat, and set the chickpeas aside to keep warm while you prepare the ranch.
