- 1 ½ TBSP tomato paste
- 1 tsp smoked paprika
- 3 large tomatoes, diced (or 1 can diced tomatoes)
- ½ lb Eden Foods Organic Green Lentils, dry (no soaking required)
- 4 cups low-sodium vegetable broth
- Freshly ground black pepper, to taste
- ½ lemon, freshly squeezed juice
- Himalayan sea salt, to taste (optional, for serving)
- Fresh cilantro or green onions, for garnish (optional)
Instructions
- Heat the avocado oil in a large stock pot or Dutch oven over medium heat. Add the diced onion and minced garlic, and cook for 3-5 minutes until the onion is translucent and fragrant.
- Add the tomato paste and smoked paprika. Stir well to coat the onion and garlic, and cook for another 1-2 minutes, allowing the tomato paste to darken slightly and the paprika to become aromatic.
- Stir in the diced tomatoes, dry green lentils, and vegetable broth. Bring the mixture to a boil over medium-high heat.
- Once boiling, cover the pot and reduce the heat to medium-low. Allow the soup to simmer gently for 50-60 minutes, or until the lentils are tender. For a thicker soup, uncover for the last 10-15 minutes of cooking to allow some liquid to evaporate.
- Uncover the pot. Stir in a generous squeeze of fresh lemon juice and season with freshly ground black pepper. Taste the soup and add Himalayan sea salt if desired, adjusting to your preference.
