As spring transitions into the warmer days of early summer, my partner M and I find ourselves eagerly anticipating the return of the hummingbirds to our Maryland backyard. A quick search on Google suggests these tiny, energetic birds typically make their appearance by mid-April. However, as May approaches, we’ve collectively decided that our beloved hummers are officially running late this year!

Perhaps they didn’t receive the memo that our deck is fully prepared for their arrival, complete with fresh feeders and a comfy lounging area for us to watch them from! If you happen to spot one of these iridescent beauties, please do send them our way. There’s a playful, unspoken competition brewing between M and me: who will catch the first glimpse of a hummingbird?

My bet is on M. He has a wonderful habit of sitting quietly on the couch, thoughtfully gazing out the window in tranquil silence. My own opportunities to simply stare out the window are usually reserved for the precious moments I take to enjoy my lunch. Luckily, we have two feeders strategically hung on the deck, perfectly visible from both our living room couch and the dining room table. This means that while savoring a delightful meal, I can keep a watchful eye on the feeders for any signs of impossibly fast wings and dazzling flashes of green.

Coincidentally, there are also wonderful flashes of green within my current favorite lunch creation – a meal I happily devour while keeping my hummer-watch going strong. This particular Chopped Greek Wrap, overflowing with crisp vegetables and protein-rich chickpeas, all nestled inside a soft tortilla with an abundance of creamy vegan tzatziki sauce, is truly a refreshing and incredibly nourishing lunch. It keeps me fully satisfied and energized, patiently waiting for our tiny winged friends to finally make their grand return!

Crafting Your Perfect Chopped Greek Wrap Filling

The initial spark for these Chopped Greek Wraps ignited from the popular TikTok chopped sandwich trend that swept across social media. You might have seen those captivating videos where people meticulously chop all their sandwich ingredients together before piling them high on bread. This method inspired the idea of finely dicing the components, ensuring every bite of the wrap delivers a harmonious blend of flavors and textures.

After a few rounds of recipe testing and playful experimentation, this concept evolved beyond a simple trend, transforming into a standalone recipe – precisely the vibrant and delicious creation it was destined to be! The beauty of the “chopped” approach lies in its ability to integrate all the ingredients perfectly, preventing any single flavor from overpowering another and making the wrap incredibly easy to eat.

Here’s what you’ll need to create this incredibly fresh and satisfying Greek-inspired filling:

  • Crisp Cucumber: Provides essential hydration and a refreshing crunch, balancing the richness of other ingredients.
  • Cal-Organic Farms Red Onion: Adds a delightful sharpness and pungent flavor that is quintessential to Greek salads. Using organic ensures the purest taste.
  • Sweet Tomato: Bursting with juicy sweetness and a touch of acidity, tomatoes are a cornerstone of Mediterranean cuisine.
  • Hearty Chickpeas: The plant-based protein powerhouse of the wrap, offering a satisfying texture and keeping you fuller for longer. Drained and rinsed, they absorb the dressing beautifully.
  • Briny Olives: Essential for that classic Greek flavor. Kalamata or black olives work wonderfully, providing a salty depth.
  • Cal-Organic Farms Italian Parsley: Fresh herbs are key! Parsley brings a bright, earthy note that uplifts the entire mixture. Opting for organic ensures superior freshness and flavor.
  • Himalayan Sea Salt: To season and enhance all the natural flavors.
  • Good Quality Olive Oil: Binds the ingredients, adds a silky texture, and provides healthy fats.
  • Tangy Red Wine Vinegar: Introduces a lovely acidity that brightens the salad and complements the olive oil to create a simple, vibrant dressing.

With these simple, wholesome ingredients, you’re well on your way to a spectacular chopped Greek filling that tastes just like a sunny day in the Mediterranean!

How to Prepare Your Delicious Greek Wrap Filling

Preparing the filling for these Greek wraps is exceptionally straightforward, making it one of the easiest and most efficient meal prep tasks you’ll tackle all week. The beauty of this recipe lies in its simplicity and the minimal effort required for maximum flavor.

To begin, simply combine all of your finely chopped Greek salad ingredients into a large mixing bowl. Once all the vibrant vegetables, chickpeas, and olives are in the bowl, give them a good toss to ensure everything is thoroughly combined. The olive oil and red wine vinegar will naturally mix as you toss, creating a light, tangy “dressing” that coats every piece, infusing the salad with its characteristic Greek flavors.

For the best flavor development, I highly recommend allowing the salad to marinate. A marinade period of 3-4 hours, or even better, overnight in the refrigerator, allows the flavors to truly meld and deepen. The vegetables absorb the olive oil and vinegar, becoming even more tender and flavorful, and the chickpeas soak up all the delicious essences, making them incredibly savory. This step truly elevates the taste profile of your wrap filling.

However, if you’re pressed for time or simply can’t wait to enjoy your creation, don’t fret! This versatile salad can absolutely be served right away. While the flavors might not be as deeply integrated, it will still be incredibly fresh, crunchy, and satisfying – perfect for a quick lunch on the go.

What You Need to Make Irresistible Vegan Tzatziki Sauce

Every truly exceptional wrap is elevated by a standout sauce, and for our Chopped Greek Wrap, we’re incredibly fortunate to feature not just one, but two fantastic sauces: a foundational layer of creamy hummus and, of course, the star of the show, our homemade Vegan Tzatziki Sauce. While hummus adds a wonderful earthiness and helps bind the wrap, the tzatziki sauce is where the magic truly happens, bringing unparalleled freshness and a classic Greek touch.

This vegan tzatziki is a revelation – it’s lusciously creamy, bursting with fresh flavors, and surprisingly easy to make. It captures all the refreshing essence of traditional tzatziki, but with a delightful plant-based twist. Made with cool cucumber, tangy unsweetened almond milk yogurt, aromatic dill, and a hint of tahini for a velvety texture, it’s not just a dip, it’s a refreshing experience in itself.

Here’s what you’ll need to whip up this incredible Vegan Tzatziki:

  • Fresh Cucumber: The core of tzatziki. Grated and squeezed to remove excess moisture, it provides that signature cool, crisp texture.
  • Unsweetened Almond Milk Yogurt: The creamy base for our vegan version. Ensure it’s unsweetened to maintain the savory profile. Any thick, plain plant-based yogurt can also work.
  • Garlic Powder: Delivers a mild, savory garlic flavor without the sharpness of raw garlic.
  • Cal-Organic Farms Dill: This herb is non-negotiable for authentic tzatziki flavor. Fresh, finely chopped Cal-Organic dill provides an aromatic, slightly anise-like note that is truly captivating.
  • Himalayan Sea Salt: Essential for seasoning and bringing out the best in all the ingredients.
  • Bright Lemon: A squeeze of fresh lemon juice adds a crucial zing and brightens the entire sauce, cutting through the richness.
  • Runny Tahini: A secret ingredient for vegan tzatziki! Tahini adds a subtle nutty depth and contributes to the sauce’s luxurious, creamy texture, making it wonderfully smooth and rich.

That’s all it takes to create a tzatziki sauce that will have everyone asking for more!

Whipping Up Your Easy Vegan Tzatziki Sauce

Crafting this flavorful Vegan Tzatziki Sauce is remarkably simple, and it comes together quickly in just one bowl, proving that delicious, homemade sauces don’t require complicated steps. It’s the perfect creamy, refreshing accompaniment to your Greek wrap, offering a burst of flavor that truly completes the meal.

To prepare, gather all your tzatziki ingredients and add them to a separate mixing bowl. This includes your finely grated and squeezed cucumber, unsweetened almond milk yogurt, garlic powder, fresh Cal-Organic dill, Himalayan sea salt, a squeeze of fresh lemon, and a touch of runny tahini. Once all ingredients are in the bowl, take a spoon and stir everything together until it’s thoroughly combined and beautifully smooth.

The most important step, and the most enjoyable, is to taste the mixture. This allows you to personalize the sauce to your exact preference. Feel free to add more salt if it needs a little lift, another squeeze of lemon for extra zing, or additional fresh dill for a more pronounced herbal note. Every palate is different, and adjusting the seasoning ensures the tzatziki is perfectly tailored to your taste buds. The recipe provided below offers my favorite measurements, but I always encourage you to taste as you go and make it truly your own! This simple act of tasting and adjusting ensures a perfectly balanced and incredibly delicious sauce every time.

Specifically, for this Chopped Greek Wrap, I utilized Cal-Organic Farms Dill for the tzatziki, the crisp and refreshing Green Romaine Lettuce for that satisfying crunch, vibrant Cal-Organic Farms Italian Parsley for the salad filling, and a flavorful Cal-Organic Farms Red Onion to add a delightful bite. These ingredients aren’t just names on a list; they are integral to the authentic, fresh taste of this wrap.

You can easily identify Cal-Organic Farms produce by their distinctive purple tags and the unmistakable USDA Organic seal. This recognition is more than just a label; it’s a promise of their unwavering dedication to the highest standards of organic practices.

Assembling Your Perfect Chopped Greek Wrap

Bringing all these delicious components together to create your Chopped Greek Wrap is the final, satisfying step. The assembly process is quick and simple, ensuring you can enjoy your fresh, homemade meal in no time. Here’s what you’ll need and how to layer your wrap for the ultimate flavor and texture experience:

For Serving:

  • Your Choice of Wrap: Select your favorite large tortilla or flatbread. Ensure it’s vegan or gluten-free as needed to suit your dietary preferences. Larger wraps work best for holding all the delicious filling.
  • Cal-Organic Farms Green Romaine Lettuce: Freshly chopped romaine adds an essential crispness and volume to the wrap, providing a wonderful textural contrast.
  • Creamy Hummus: Homemade or your favorite store-bought variety. This acts as a delicious adhesive layer and adds an extra layer of flavor and creaminess.

Begin by laying your chosen wrap flat on a clean surface or plate. Spoon a generous amount of hummus onto the center of the wrap, spreading it out in a small circle, leaving a border around the edges. This hummus layer not only adds flavor but also helps prevent the wrap from getting soggy and holds the filling in place.

Next, pile a few generous spoonfuls of your delicious chopped Greek salad filling right on top of the hummus. Be mindful to drain any excess dressing from the salad before adding it to the wrap; this helps keep your wrap from becoming overly wet.

Now, comes the star sauce! Top the salad filling with a generous spoonful of your freshly made Vegan Tzatziki Sauce. Don’t be shy – this creamy, tangy sauce is what truly ties all the Greek flavors together. Finally, add a big handful of the chopped Cal-Organic Farms romaine lettuce for that irresistible fresh crunch.

To roll the wrap, fold in the sides of the tortilla over the filling, then starting from the bottom, tightly roll it up burrito-style. This technique ensures all the delicious ingredients are securely tucked inside. Serve your beautifully assembled Chopped Greek Wrap immediately, perhaps sliced in half to reveal its vibrant layers, and enjoy the refreshing burst of Mediterranean flavors!

Tips for Enjoying and Meal Prepping Your Chopped Greek Wraps

These Chopped Greek Wraps are an absolute delight, especially as a light yet satisfying meal when the weather warms up. Their vibrant flavors and fresh ingredients make them an ideal choice for a refreshing lunch or a quick, healthy dinner. With just a little bit of advance preparation, you can have these delicious wraps ready to enjoy in under 10 minutes, making healthy eating convenient and accessible.

One of the best features of this recipe is how perfectly suited it is for meal prepping. To streamline your week, you can easily prepare the Greek salad filling, chop your fresh lettuce, and whip up the vegan tzatziki sauce ahead of time. Keeping these components stored separately will maintain their freshness and texture, allowing you to assemble a fresh wrap whenever hunger strikes.

Simply store the leftover chopped Greek salad filling, the chopped romaine lettuce, and the vegan tzatziki sauce in separate, airtight containers in the refrigerator. When you’re ready to eat, just grab a wrap, spread your hummus, add a scoop of the filling, a dollop of tzatziki, and a handful of lettuce, then roll and enjoy! The prepared sauce and filling will stay fresh and delicious for up to 5 days, providing you with healthy meal options throughout the week.

For those who love to experiment, this recipe is highly adaptable. Don’t hesitate to try adding or swapping out vegetables in your Greek salad filling. Bell peppers, artichoke hearts, sun-dried tomatoes, or even a sprinkle of crumbled vegan feta would make delicious additions, introducing new layers of flavor and texture. Feel free to make it your own!

If you find yourself with any leftover Vegan Tzatziki, consider yourself lucky! This versatile sauce is far too delicious to go to waste. It pairs wonderfully as a dip for fresh vegetables like carrot sticks and celery, as a creamy spread on other sandwiches, or as a flavorful dressing in grain bowls. You can even experiment by drizzling it over roasted vegetables or using it as a unique accompaniment to grilled plant-based proteins. Its refreshing tang can even complement some fruits for a surprisingly delightful twist.

However you choose to customize and enjoy them, these Chopped Greek Wraps are sure to become a staple in your healthy meal rotation. Enjoy every fresh, flavorful bite!

Description

Chopped Greek Wrap with vegetables and chickpeas wrapped in a tortilla with lots of vegan tzatziki sauce. Perfect for a refreshing lunch!

Ingredients

Chopped Greek Salad Filling

  • 1 medium cucumber, finely chopped
  • 1/2 small Cal-Organic Farms Red Onion, finely chopped
  • 2 small or 1 medium tomato, finely chopped
  • 1 can chickpeas, drained and rinsed
  • ~1/2 cup olives, finely chopped
  • 1/4 cup Cal-Organic Farms Italian Parsley, finely chopped
  • ¼ tsp Himalayan sea salt
  • 2 TBSP olive oil
  • 1 TBSP red wine vinegar

Creamy Vegan Tzatziki Sauce

  • 1/2 large cucumber (unpeeled and finely grated, excess moisture squeezed)
  • 1 1/2 cups unsweetened almond milk yogurt (or other thick plant-based yogurt)
  • ¼ tsp garlic powder
  • 1/4 cup finely chopped fresh Cal-Organic Farms Dill
  • ¼ tsp Himalayan sea salt
  • ½ lemon, squeezed
  • 1 TBSP runny tahini

For serving

  • 34 wraps of choice, gluten-free or vegan as needed
  • 1 small bunch of Cal-Organic Farms Green Romaine Lettuce, chopped
  • 1 cup hummus (homemade or store bought)

Instructions

  1. Prepare the Greek Salad Filling: In a large mixing bowl, combine all the finely chopped Greek salad ingredients (cucumber, red onion, tomato, chickpeas, olives, Italian parsley, Himalayan sea salt, olive oil, and red wine vinegar). Toss them thoroughly to combine everything, allowing the oil and vinegar to create a light dressing. For best results, let it marinate for 3-4 hours or overnight in the refrigerator to allow the flavors to meld. If you’re in a hurry, it can also be served immediately.
  2. Make the Vegan Tzatziki Sauce: In a separate bowl, mix together all the tzatziki sauce ingredients (grated cucumber, unsweetened almond milk yogurt, garlic powder, fresh dill, Himalayan sea salt, lemon juice, and tahini). Stir well until creamy and thoroughly combined. Taste the mixture and adjust seasonings by adding more salt, lemon, or dill to suit your preference.
  3. Assemble the Wraps: Lay your chosen wrap flat on a clean surface. Spoon the hummus onto the center of the wrap, spreading it in a small circle, leaving a border around the edges. Add a few generous spoonfuls of the chopped Greek salad filling on top, making sure to drain any excess dressing to prevent sogginess. Follow with a generous dollop of the vegan tzatziki sauce and a big handful of chopped romaine lettuce. Carefully fold in the sides of the wrap, then roll it up tightly from the bottom, burrito-style.
  4. Serve and Store: Serve your Chopped Greek Wraps immediately for the freshest taste and texture. To store leftovers, keep the Greek salad filling, chopped lettuce, and tzatziki sauce separately in airtight containers in the refrigerator. Reassemble wraps just before serving. The leftover sauce and filling will stay fresh for up to 5 days, making this recipe perfect for meal prep throughout the week.
