Here in Virginia, the cold has truly settled in, and I’m right there with it, feeling the frosty bite through every uninsulated corner of my townhouse. While I genuinely appreciate the beauty of changing seasons, the colder months have never quite been my cup of tea. They demand so much extra effort, don’t they?

There are the endless layers of clothing, the necessity of heavy socks, and the constant application of moisturizer to ward off dry skin. And if you manage to snag a few precious rays of Vitamin D throughout the day, that’s truly a bonus! Despite the challenges, there’s an undeniable joy in finding comfort and warmth indoors, especially through food. Today, I’m thrilled to share a recipe that promises to do just that – it will infuse your kitchen with delightful aromas, warm your heart, and nourish you from the inside out.

Back then, Flora & Vino was merely a burgeoning passion project, not yet a “proper” business, and I was still balancing a demanding 9-to-5 job with my side hustle as a food blogger. Fridays were particularly special; getting off work early meant a rush home, eager to whip up a pan of these “fries” to truly and properly celebrate “fry-day” in style.

The initial spark for these Golden Sesame Butternut Squash Fries came from a cookbook I deeply admire: The No Meat Athlete Cookbook. It absorbs seasonings beautifully and gets wonderfully tender on the inside with a satisfying crisp on the outside. I had a couple of containers of those convenient crinkle-cut butternut squash in my fridge, and the idea of transforming them into something warm, spiced, and utterly comforting instantly took hold. These Golden Sesame Butternut Squash “fries” are a delectable, healthy alternative to traditional potato fries. Oven-baked to perfection, they are generously seasoned with warming turmeric and aromatic cumin, then coated with crunchy sesame seeds. Ingredients

  • 1 package of pre-cut Butternut squash crinkle cut “fries”  (I found mine at Whole Foods!), or peel and slice your own Butternut squash into “fries”
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp garlic powder
  • pinch of Himalayan sea salt
  • pinch of black pepper
  • 1 TBSP avocado oil* (optional, but helps with crispiness and adhesion of spices/seeds)
  • 2 TBSP white sesame seeds


Instructions

  1. Preheat your oven to 375°F (190°C) to ensure it’s at the ideal temperature for baking. Line a large baking sheet with parchment paper to prevent sticking and make cleanup a breeze.
  2. In a generously sized mixing bowl, combine the ground turmeric, cumin, garlic powder, Himalayan sea salt, and black pepper. Toss these dry spices together thoroughly to create a uniform seasoning mixture.
  3. If using pre-cut butternut squash, simply remove it from its packaging. If you’re using a whole squash, carefully peel it, remove the seeds, and then slice it into uniform “fry” shapes, aiming for consistency for even cooking.
  4. Add the prepared butternut squash to the large bowl with the spice mixture. Drizzle in the avocado oil (if using). Begin tossing the squash vigorously with a large spoon. Initially, the spices might appear clumpy, but continue mixing until the fries are vibrantly coated and gleaming orange from the turmeric.
  5. Once the squash is well-spiced, add the white sesame seeds to the bowl. Toss again to combine, ensuring that the sesame seeds adhere to the spiced butternut squash fries for that delightful outer crunch.
  6. Transfer the seasoned fries to the parchment-lined baking sheet, spreading them into a single, even layer. Avoid overcrowding the pan, as this will steam the fries instead of allowing them to crisp up. Scrape any remaining sesame seeds or spices from the bowl and sprinkle them evenly over the fries on the baking sheet.
  7. Bake the fries in the preheated oven for 25-30 minutes, or until they are beautifully golden brown and lightly crispy around the edges. Keep an eye on them towards the end to prevent burning. Notes

If you prefer an oil-free approach, you can certainly omit the avocado oil. However, please note that the oil greatly assists in creating crispier fries and ensures the sesame seeds and spices stick more effectively. Results may vary without it.
