Description

Ingredients

Garden Quinoa Burgers

  • 2 cups cooked quinoa, any color
  • 1 large zucchini, diced (~2 cups)
  • 1 large red bell pepper, diced
  • 1/2 cup white or yellow onion, diced
  • 1/2 cup cilantro, roughly chopped
  • 1/4 cup flaxseed meal
  • 1/2 tsp garlic powder
  • 1 TBSP Tamari lite

For serving

  • bun of choice: ie. gluten-free breaded bun, portobello mushroom bun, lettuce bun, etc.
  • sliced heirloom tomato
  • kale
  • avocado
  • red onion
  • ketchup
  • mustard


Instructions

  1. Preheat oven to 400°F (200°C) and line a baking pan with parchment paper. This will prevent sticking and ensure easy cleanup.
  2. Add all of the burger ingredients (cooked quinoa, diced zucchini, red bell pepper, onion, cilantro, flaxseed meal, garlic powder, and Tamari lite) to a high-speed blender or food processor. Pulse the mixture until it’s well-combined. You want the diced vegetables to be thoroughly broken down and integrated into the quinoa, but not completely puréed – some texture is desirable for a satisfying bite.
  3. Form the mixture into patties. You can make 4-6 larger patties (approximately 1/2 cup each) or 8-12 smaller sliders (about 1/4 cup each), depending on your preference. Ensure they are uniformly thick for even cooking.
  4. Place the formed patties on the prepared baking pan. Bake them in the preheated oven for 35-40 minutes. Halfway through the baking time, carefully flip the patties to ensure both sides cook evenly and become golden brown and crispy. The quinoa should start to show signs of crispiness on the outside.
  5. Serve the burgers immediately after baking for a warm, delicious meal. For an extra layer of crispiness, proceed to step 6.
