Just yesterday, I experienced this firsthand with a unique gift drop-off at my parents’ house.

I carefully loaded brown paper bags, brimming with wrapped presents and bright red bows, into my car. As I drove down the familiar highways, humming along to classic Christmas tunes, I felt a delightful sense of being a modern-day Santa Claus. Dropping off their gifts on my old front porch and collecting ones addressed “To: Lauren” in return felt like a sweet, full-circle moment. It was amusing to discover we had both used the same type of Whole Foods brown paper bags for our exchanges – a small, shared detail that brought a smile to my face. Waving at my parents through a storm door, masks obscuring our full expressions, I knew they could see the grin beneath mine.

Upon returning home, my partner, M, pointed out how the growing pile of new gifts completely dwarfed our small mini tree. It’s a wonderful reminder that this Christmas, despite its differences, is going to be incredibly special, filled with love and, of course, delicious food.

This uniformity is key for even cooking, so thinner carrots can remain whole while thicker ones are cut down to size.

Season and Toss

Ingredients

  • If You Care Parchment Baking Sheets
  • 1 pound of carrots (~about 2 bunches), peeled with greens chopped
  • 2 TBSP avocado oil
  • 1/2 tsp garlic powder
  • 2 tsp ground cumin
  • ½ tsp Himalayan sea salt
  • cilantro or fresh herbs for serving


Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Place the carrots on the pan, then drizzle with avocado oil and sprinkle with the garlic powder, cumin powder, and Himalayan sea salt. Mix them with your hands until the carrots are evenly coated with the spice mixture. 
  3. Bake the carrots 20 to 30 minutes until tender and lightly browned, stirring once to ensure even baking.  The bake time will vary depending on the thickness of the carrot. Carrots are done when fork tender and slightly browned on the outside.
  4. To serve, plate the roasted carrots and sprinkle with optional herbs!
