Ingredients

  • 1 8-oz package of tempeh, steamed and crumbled (for a hearty, protein-packed base)
  • 1 bunch of kale, rinsed, dried, and thoroughly shredded (creates a robust, nutrient-dense foundation)
  • 1/2 red onion, finely diced (adds a sharp, fresh bite)
  • 2 radishes, thinly sliced (for a peppery crunch and vibrant color)
  • 1/2 cup yellow corn, steamed (provides natural sweetness and a pop of texture)
  • 1 bell pepper, any color, diced (choose your favorite for sweetness and crispness)
  • 1 small cucumber, thinly sliced (offers a refreshing, cooling element)
  • 1/2 cup hemp hearts (the key ingredient for our creamy, oil-free dressing)
  • 1/2 cup filtered water (to achieve the perfect dressing consistency)
  • 2 TBSP nutritional yeast (for a cheesy, umami flavor in the dressing)
  • 2 TBSP fresh lemon juice (brightens the dressing and vegetables)
  • 1/4 tsp garlic powder (adds a subtle, savory depth to the dressing)
  • a couple handfuls of fresh cilantro, roughly chopped (for garnish and fresh herby flavor)
  • extra hemp hearts (for serving and added texture/nutrition)


Instructions

  1. Carefully remove the tempeh from its packaging, give it a quick rinse under cold water, and then add it to a pan of boiling water or a dedicated steamer basket. Steam the tempeh for approximately 10 minutes to reduce any bitterness and soften its texture. Once steamed, drain the tempeh thoroughly and allow it to cool completely. When cool, use your hands to crumble the tempeh into small, ground-like pieces. Store the crumbled tempeh in an airtight container in the refrigerator until you are ready to assemble your bowls.
  2. Prepare your incredibly creamy hemp heart ranch dressing. Combine the hemp hearts, filtered water, nutritional yeast, fresh lemon juice, and garlic powder in a high-speed blender. Blend on high until the mixture is completely smooth and achieves a thick, creamy, ranch-like consistency. Adjust consistency with a tablespoon more water if needed, and taste to adjust seasonings.
  3. Begin preparing your fresh vegetables. Thoroughly wash and chop the kale greens, ensuring they are well-shredded. Proceed to chop all the other vegetables (red onion, radishes, bell pepper, cucumber) as indicated in the ingredients list. Steam the yellow corn, then let it cool.
