These Avocado & Cucumber Rolls are a delightful plant-based culinary creation, artfully wrapped in toasted sushi nori sheets. This recipe is more than just a meal; it’s a shared experience, making it perfect for an intimate date night, a fun family cooking project, or any occasion where you want to enjoy delicious, homemade vegan sushi. It’s also an excellent option for those seeking allergen-friendly meals.


Ingredients

For the Sushi Rice:

  • filtered water
  • 1 cup organic white sushi rice, or sub brown rice, rinsed thoroughly
  • 2 TBSP rice vinegar
  • 1 TBSP pure maple syrup
  • pinch of sea salt

For the Avocado & Cucumber Rolls:

  • 4 sheets sushi nori
  • 1 English cucumber, peeled, seeds removed, and sliced into small matchsticks
  • 2 ripe avocados, thinly sliced

For the Creamy SunButter Sauce:

  • 1/3 cup No Sugar Added SunButter
  • 1 TBSP Tamari Lite
  • 1/2 TBSP pure maple syrup
  • 1 tsp chili garlic sauce (adjust to taste)
  • 1 TBSP fresh lime juice
  • ~1/4 cup filtered water (for thinning, adjust as needed)

For Serving:

  • sesame seeds (for garnish)
  • extra SunButter Sauce
  • Tamari Lite or coconut aminos


Instructions

  1. **Prepare the Sushi Rice:** Begin by soaking the thoroughly rinsed sushi rice and filtered water in a saucepan for about 30 minutes before cooking. After soaking, heat the saucepan over medium-high heat and bring the rice and water to a boil. Once boiling, cover the pan with a tight-fitting lid and reduce the heat to medium-low. Allow the rice to simmer gently until all the water is completely absorbed and the rice is perfectly tender, which usually takes about 20 minutes. Once cooked, remove the pan from the heat and let it sit, still covered, for an additional 10 minutes to allow the steam to finish the cooking process and firm up the rice.
  2. **Season the Rice:** When the rice is cool enough to handle, transfer it to a large bowl. Add the rice vinegar and pure maple syrup. Gently mix everything well, using a cutting motion, to ensure the rice is completely and evenly coated with the seasoning. Cover the bowl and place the seasoned rice in the refrigerator to chill until you are ready to assemble your sushi rolls. Chilled rice is much easier to work with.
  3. **Prepare the Fillings:** To prepare your fresh fillings, first peel an English cucumber and slice it in half lengthwise. Use a spoon to carefully remove the seeds; this prevents the sushi from becoming watery. Trim the ends of the cucumber so they match the length of your sushi nori sheets. Slice the remaining cucumber into very thin matchsticks – the thinner, the better for easy rolling and an elegant presentation. Next, slice the ripe avocados into thin, even strips. Set all prepared fillings aside.
  4. **Make the SunButter Sauce:** In a small mixing bowl, combine all the ingredients for the SunButter Sauce: No Sugar Added SunButter, Tamari Lite, pure maple syrup, chili garlic sauce, and lime juice. Whisk everything thoroughly until completely combined and smooth. Gradually add filtered water as needed to thin out the mixture to your preferred consistency; it should be thick but pourable, perfect for dipping or drizzling. Refrigerate the sauce until ready to use, allowing the flavors to meld.
  5. **Ready to Roll:** Lay a bamboo sushi mat on a clean surface and place a sheet of sushi nori on top, with the shiny side facing down. Dip your hands in water (this is essential to prevent the rice from sticking to your fingers!). Pat a very thin, even layer of the chilled sushi rice over about three-quarters of the nori, leaving a 1-inch strip bare at the top edge furthest from you. Ensure the rice layer isn’t too thick to allow for easy rolling.
  6. **Add the Fillings:** Along the bottom three-quarters of the rice (the edge closest to you), arrange about half of your thinly sliced avocado and a few cucumber matchsticks in a neat horizontal line. Be mindful not to overfill, which can make the roll difficult to seal.
  7. **Roll & Slice the Sushi:** Using your fingers, carefully lift the edge of the nori and mat closest to you, folding it over the avocado and cucumber filling. Once the filling is covered, roll the mat over to mold and compress the roll tightly. Continue rolling in this fashion, applying gentle, even pressure until the entire sheet is rolled up. Dab a little water onto the ending bare edge of the nori to seal the roll shut. Now, using a very sharp, damp knife, carefully cut the long roll into 8 individual sushi slices. Repeat this entire process until all the prepared rice and filling are used up, which typically yields about 3-4 rolls, depending on your filling generosity.
  8. **Serve Immediately:** Arrange the freshly cut sushi rolls on a platter. Serve immediately with generous portions of the creamy SunButter Sauce, along with Tamari Lite or coconut aminos, and a sprinkle of toasted sesame seeds for an added touch of flavor and elegance.
  9. **Storage Tips:** While these Avocado & Cucumber Rolls are best enjoyed fresh, any leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Note that the avocado may slightly brown over time, but the flavors will still be delicious.
