Emerald Swiss Chard Pasta

Wholesome & Vibrant: Easy Vegan Swiss Chard Pasta with Creamy Cashew Sauce

There’s nothing quite like discovering a new favorite meal that’s both incredibly delicious and packed with vibrant nutrition. This Swiss Chard Pasta recipe is exactly that – a refreshing, green delight that will quickly become a staple in your kitchen. Imagine a sauce so rich and flavorful, yet entirely plant-based, coating your favorite noodles. It’s a delightful twist that’s similar to a classic pesto or a zesty green goddess dressing, but uniquely its own.

Life can be a whirlwind, filled with unexpected joys and new experiences. Just recently, our sweet Flora, our beloved canine companion, embarked on her very first overnight adventure away from us since joining our family nine months ago. While we enjoyed a fantastic concert in Virginia, a part of me, much like any caring parent, kept wondering if she was having a good time. The next morning, we picked her up from doggie daycare, expecting a tearful reunion. To our surprise, she seemed perfectly content to stay with her new providers, having clearly made some new friends and had the time of her life!

Much like Flora’s new friends, I’ve also found a delightful new companion in my culinary journey: this incredible Swiss Chard Pasta. This isn’t just any pasta dish; it’s a celebration of fresh, wholesome ingredients that come together to create a creamy, herbaceous sauce. Made with fresh Swiss chard, aromatic basil, creamy cashews, and savory nutritional yeast, this vibrant green sauce is perfectly paired with any pasta you choose.

Forget everything you thought you knew about traditional pasta sauces. This isn’t your nonna’s pesto, nor is it merely a green goddess salad thrown over noodles. It’s a distinct creation that stands out with its earthy notes from the chard, bright freshness from the basil, and an undeniable creaminess from the cashews, all tied together with a subtle cheesy tang from nutritional yeast. Prepare yourself for a burst of green goodness on your plate!

The Power of Green: Why Swiss Chard Pasta?

Opting for a vibrant green pasta sauce like this Swiss Chard Pasta offers numerous benefits beyond just a delicious meal. Swiss chard is a powerhouse leafy green, rich in vitamins K, A, and C, as well as essential minerals like magnesium, potassium, and iron. Incorporating it into your diet supports bone health, boosts immunity, and promotes a healthy gut. Plus, it adds a beautiful, natural color to your dish, making it as appealing to the eye as it is to the palate.

This recipe transforms these nutritious greens into an approachable and incredibly tasty sauce, proving that healthy eating can be both easy and satisfying. The unique flavor of Swiss chard, often described as a slightly earthy and sweet spinach, is beautifully complemented by the fresh basil and other ingredients, creating a balanced and delightful taste profile that even picky eaters will appreciate.

Essential Ingredients for Your Vegan Swiss Chard Pasta

Crafting this incredible vegan Swiss Chard Pasta sauce requires just a handful of simple, wholesome ingredients. The magic lies in how they combine to form a rich, creamy, and intensely flavorful experience. Here’s a closer look at what you’ll need to create this green marvel:

  • Fresh Basil: This aromatic herb is crucial for the sauce’s bright, fresh notes. It complements the earthiness of the chard beautifully and contributes to the vibrant green hue. Always opt for fresh basil for the best flavor.
  • Cal-Organic Chopped Rainbow Chard: Our star ingredient! Cal-Organic provides high-quality, pre-chopped rainbow chard, which is incredibly convenient. Swiss chard is packed with vitamins and minerals, offering fantastic health benefits. Rainbow chard also adds a lovely visual appeal with its colorful stems, although the sauce will be uniformly green.
  • Raw Cashews: These are the secret to achieving a luxurious, creamy texture without any dairy. Soaking them beforehand is a crucial step that softens them, allowing them to blend into a silky-smooth sauce. They also add a subtle nutty flavor that enhances the overall richness.
  • Filtered Water: Used to help the blending process and to adjust the sauce to your desired consistency. Start with the recommended amount and add more sparingly as needed.
  • Garlic Powder: Provides a foundational savory depth that enhances all the other flavors. While fresh garlic can also be used, powder offers a milder, more evenly distributed garlic essence without overwhelming the other ingredients.
  • Fresh Lemon Juice: A splash of fresh lemon juice is essential for brightening the sauce and cutting through its richness. It adds a tangy zest that elevates the entire dish, preventing it from tasting too heavy.
  • Nutritional Yeast: This is your vegan cheese substitute! Nutritional yeast provides a distinct umami flavor with a cheesy, nutty profile. It’s also a good source of B vitamins, adding to the health benefits of the sauce.
  • Himalayan Sea Salt: Essential for seasoning and bringing out all the individual flavors. Adjust to taste to ensure perfect balance.
  • Chickpea Pasta: While any noodle works, chickpea pasta provides a gluten-free, high-protein base that pairs wonderfully with the rich sauce. Its slightly chewier texture holds up well and makes the meal even more satisfying.

That’s it! With these simple ingredients, you’re well on your way to creating a truly spectacular vegan pasta dish.

Crafting Your Creamy Swiss Chard Pasta Sauce

Making this Swiss Chard Pasta Sauce is surprisingly simple, primarily thanks to the power of a good blender or food processor. The key is to achieve that perfect creamy consistency that lovingly coats every strand of pasta.

  1. Prepare Your Cashews: If you haven’t already, soak your raw cashews in hot water for about 30 minutes. This step is crucial for softening them, ensuring they blend into a super smooth, creamy sauce without any gritty texture. After soaking, drain and rinse them thoroughly.

  2. Combine Ingredients: Add all the sauce ingredients – fresh basil, chopped rainbow chard, soaked cashews, filtered water, garlic powder, fresh lemon juice, nutritional yeast, and Himalayan sea salt – into your high-speed blender or food processor. Make sure your blender is powerful enough to handle leafy greens and nuts.

  3. Blend to Perfection: Begin pulsing the mixture, gradually increasing the speed. Scrape down the sides of the blender as needed to ensure everything is incorporated evenly. Continue blending until you achieve a thick, smooth, and uniform paste. It should be rich and creamy, with no visible chunks of chard or cashews.

  4. Adjust Consistency: The beauty of this sauce is that you can customize its thickness. If you prefer a thinner sauce that’s easier to toss with pasta, add additional filtered water one tablespoon at a time, blending after each addition, until it reaches your desired consistency. I personally love mine a bit thicker, as it clings to the pasta wonderfully and delivers maximum flavor in every bite.

  5. Taste and Season: This is a crucial step! Taste the sauce and adjust the seasonings to your liking. You might want to add more salt to enhance the flavors, a little more lemon juice for extra brightness, a dash more garlic powder for a stronger kick, or additional nutritional yeast for an even cheesier profile. Don’t be shy – make it perfect for your palate!

And just like that, your vibrant, creamy Swiss Chard Pasta sauce is ready to elevate your pasta dish!

This delightful green sauce owes its vibrant color and robust nutritional profile to fresh basil and Cal-Organic Chopped Rainbow Chard. We are proud to partner with Cal-Organic Farms, a brand dedicated to providing high-quality, fresh organic produce that makes healthy eating accessible and enjoyable.

While creating this recipe, we were reminded of the incredible health benefits packed into Swiss chard. It’s an excellent source of vitamins K, A, and C, which are vital for bone health, vision, and immune function, respectively. Furthermore, it offers a good dose of minerals like magnesium, potassium, and iron, contributing to overall well-being. Incorporating such nutrient-dense greens into your diet is a simple yet powerful way to support your health.

What makes Cal-Organic’s pre-packaged greens particularly appealing is their unparalleled convenience. These greens come ready to use straight out of the bag, significantly cutting down on prep time. This makes them an ideal choice for busy weeknights, meal prepping, or when you simply want a quick and nutritious meal without the hassle of extensive washing and chopping. The fact that they are fresh and organic is a huge bonus, ensuring you’re getting the best quality ingredients possible.

The versatility of these chopped greens is truly endless. While they shine in this delicious pasta sauce, don’t stop there! You can effortlessly toss them into a quick salad for an instant nutritional boost, sauté them with other vegetables for a flavorful stir-fry, or even blend them into smoothies for a hidden dose of vitamins. Cal-Organic greens are not just convenient; they are a flavorful and nutritious foundation for countless culinary creations.

Creative Swaps and Serving Suggestions

One of the best aspects of this Swiss Chard Pasta recipe is its adaptability. Feel free to get creative with substitutions and serving methods to best suit your pantry and preferences.

Ingredient Swaps:

  • Nuts: If cashews aren’t available, or if you’re looking for a different flavor profile, raw walnuts make an excellent substitute. Walnuts will lend a slightly earthier, more robust flavor to the sauce, reminiscent of a traditional pesto. Almonds could also work, offering a milder nutty taste. Remember to soak any nuts you use for optimal creaminess.
  • Leafy Greens: While Swiss chard adds a unique and highly nutritious element, other leafy greens can be used if preferred. Spinach will give a milder flavor and an even brighter green color, while kale or collard greens would offer a more robust, slightly bitter edge, similar to the chard. If using heartier greens like kale, consider blanching them briefly before blending to ensure a smoother sauce.
  • Pasta: I opted for chickpea pasta for its gluten-free nature and added protein, making this meal extra satisfying. However, any type of pasta will work beautifully! Whether you prefer classic wheat pasta, lentil pasta, or even zucchini noodles for a low-carb option, simply cook it according to package instructions.

Serving Ideas:

  • Roasted Vegetables: This pasta pairs wonderfully with roasted vegetables. My personal favorite is roasted broccolini, which offers a slight bitterness and tender-crisp texture that complements the creamy pasta. Other great options include asparagus, bell peppers, cherry tomatoes, or even roasted root vegetables like carrots or parsnips.
  • Protein Boost: For an extra boost of protein, consider adding baked tofu, tempeh, or white beans to your finished pasta. Sautéed mushrooms or chickpeas would also be delicious additions.
  • Fresh Garnishes: Always finish your dish with fresh basil leaves for an extra pop of flavor and color. A sprinkle of vegan parmesan cheese (store-bought or homemade from nuts) adds a delightful savory topping. A drizzle of high-quality extra virgin olive oil before serving can also enhance the richness.
  • Meal Prep: This Swiss Chard Pasta is fantastic for meal prepping! Prepare a large batch and portion it into airtight containers for quick and healthy lunches or dinners throughout the week. It reheats well in the microwave or on the stovetop with a splash of water or vegetable broth to loosen the sauce.

Experiment with these suggestions to make this healthy and flavorful pasta dish truly your own!

Bringing It All Together: Serving Your Swiss Chard Pasta

Once your luscious Swiss chard pasta sauce is ready, the final steps to serving a delightful and wholesome meal are quick and easy.

  1. Cook Your Pasta: Begin by cooking your chosen pasta according to the package instructions. Aim for al dente for the best texture. Once cooked, drain the pasta thoroughly. For cold pasta salads or to prevent sticking, you can rinse the pasta under cold water; however, for a warm dish, a quick drain is usually sufficient. Toss the cooked pasta with a light drizzle of olive oil to keep the strands from sticking together while you prepare the final steps.

  2. Combine and Coat: Transfer the cooked pasta to a large mixing bowl. Generously spoon the vibrant green Swiss chard sauce over the pasta. Using tongs or a large spoon, gently mix everything together. Ensure that every single noodle is beautifully coated in the creamy, flavorful sauce. The goal is a uniform distribution of that gorgeous green goodness.

  3. Garnish and Serve: Divide the coated pasta among serving bowls. For an extra touch of freshness and flavor, top each serving with a scattering of fresh basil leaves. A sprinkle of vegan parmesan cheese is highly recommended to add a savory, salty finish that truly elevates the dish.

  4. Storage: Any leftover Swiss Chard Pasta can be stored in an airtight container in the refrigerator for 4-5 days. When you’re ready to enjoy it again, simply reheat it in the microwave or on the stovetop. If the sauce has thickened too much in the fridge, you can add a tablespoon or two of water or vegetable broth while reheating to restore its creamy consistency.

Enjoy this incredibly easy, nutritious, and undeniably delicious Swiss Chard Pasta! It’s a testament to how simple, plant-based ingredients can create extraordinary flavors.

Description

Swiss Chard Pasta Sauce made with swiss chard, basil, cashews, and nutritional yeast on top of your favorite noodles.

Ingredients

Green Sauce

  • 1 cup packed fresh basil (large stems removed)
  • 1 large handful of Cal-Organic Chopped Rainbow Chard
  • 2/3 cup raw cashews, soaked in hot water for ~30 minutes
  • ⅔ cup filtered water
  • ¼ tsp garlic powder
  • 1 ½ TBSP fresh lemon juice
  • 1 TBSP nutritional yeast
  • 1/4 tsp Himalayan sea salt

For serving

  • 1 8-oz. box of chickpea pasta
  • Fresh basil leaves
  • Vegan parm

Instructions

  1. Add all of the ingredients for the pasta sauce in a high-speed blender or food processor and pulse until it’s a thick paste. Add additional filtered water as needed to reach your desired consistency. I like mine a bit thicker to stick to the pasta! Taste the mixture and add more salt, lemon, garlic, or nutritional yeast to your liking.
  2. Cook the pasta according to package instructions. Drain and rinse the pasta under cold water. Toss it with a drizzle of olive oil to prevent it from sticking.
  3. Add the pasta to a large mixing bowl and spoon the green sauce on top. Mix everything together until it’s well combined and all of the pasta is coated in the green sauce.
  4. Serve the pasta topped with fresh basil and vegan parmesan. Store any leftovers in an airtight container in the refrigerator for 4-5 days and reheat in the microwave before serving.
