Let’s be honest, who among us can resist the nostalgic charm of a classic Peanut Butter and Jelly sandwich? If your hand just shot up, then welcome, friend – you are absolutely my kind of person! Lately, I’ve found myself in the delightful grip of a major PB&J obsession, and honestly, I’m not even attempting to hide it. This beloved combination of creamy peanut butter and sweet berries has been making more appearances in my adult life than it ever did in my school brown-bag lunches.

As an adult, I like to think I’ve become a bit more inventive in how I enjoy this timeless duo. And that’s precisely where these incredible PB&J Baked Breakfast Bars come into play. Requiring just six simple ingredients, these bars transform the classic flavor profile into a wholesome, grab-and-go breakfast or a supremely satisfying snack, bursting with the irresistible taste of peanuts and fresh berries. They’re a testament to how creative and nutritious our favorite childhood flavors can become, without sacrificing any of the deliciousness we remember.

The Delicious Origin Story: Crafting These PB&J Breakfast Bars

The culinary journey for these specific Peanut Butter & Jelly Baked Breakfast Bars began with the popular Blueberry Maple Breakfast Bars. If you haven’t yet had the pleasure of trying those, now might be the perfect moment to explore that delightful recipe as well. You’ll quickly notice a familiar cast of wholesome ingredients, including robust, heart-healthy oats, naturally sweet Medjool dates, and the golden richness of pure maple syrup. This foundation provides a fantastic base for all kinds of flavor explorations, and it’s what makes these bars so incredibly versatile.

For this PB&J iteration, I made a few strategic but simple swaps to bring the classic flavor to life. Instead of protein powder used in the original recipe, I opted for peanut powder. This clever substitution delivers an intense peanut flavor that truly makes these bars sing, while also boosting the protein content. Then, to perfectly capture the “Jelly” aspect, I replaced almonds with peanuts and swapped out blueberries for vibrant, juicy strawberries. The result is a harmonious blend that comes together almost as effortlessly as assembling a traditional peanut butter and jelly sandwich, but in a much more exciting, baked bar form. It’s a truly inspired twist on a beloved classic!

It was actually a happy accident that led to the creation of these delicious squares. One morning, I preheated my oven, fully intending to bake a batch of my beloved Blueberry Maple Baked Breakfast Bars. However, to my dismay, I discovered I was completely out of fresh blueberries. The horror! Not one to be deterred, I quickly pivoted and decided to use some fresh strawberries instead, thinking I’d create Strawberry Maple Bars. An easy, logical fix, or so I thought.

Sometime after adding those beautiful red berries to the mix, my mind started to wander. I began daydreaming about different PB&J variations, and on a playful whim, I decided to incorporate both peanuts and peanut powder. This spontaneous addition proved to be a stroke of genius, transforming what was intended to be a simple strawberry bar into these utterly irresistible PB&J Baked Breakfast Bars. It just goes to show that sometimes, the best recipes emerge from unexpected moments of inspiration and a little bit of kitchen improvisation!

A Flavorful Review: Tasting Notes on These PB&J Breakfast Bars

Now, don’t tell my original Blueberry Maple Baked Breakfast Bars this, but I have a secret: I truly believe this peanut butter and jelly variation might just be my all-time favorite. There’s something undeniably magical about the combination of flavors and textures in these bars that makes them truly stand out. From the very first bite, you’ll experience a delightful explosion of rich, nutty peanut butter flavor, perfectly balanced by the sweet, slightly tart notes of ripe strawberries.

Beyond the incredible taste, the texture is absolutely divine. These bars boast a beautifully golden exterior, hinting at their perfectly baked crunch, while the interior remains wonderfully moist and satisfyingly chewy. They strike that ideal balance between being substantial enough to feel like a proper breakfast, yet decadent enough to curb any sweet craving. Did I mention that these homemade PB&J treats are also naturally oil-free, entirely gluten-free, and completely free of refined sugars? It’s a combination that’s incredibly hard to beat, especially when you consider how naturally delicious peanuts and fresh, ripe strawberries are together. Every element works in harmony to create a wholesome, flavorful, and incredibly satisfying breakfast or snack option.

Six Simple Ingredients for Your PB&J Baked Breakfast Bars

One of the many beautiful things about these Peanut Butter & Jelly Baked Breakfast Bars is their simplicity. You only need six straightforward ingredients to bring this deliciousness to life, and chances are, most of them are already staples in your pantry. Here’s a breakdown of what you’ll need to create these wholesome, satisfying treats:

  • Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats: These provide the hearty, fibrous base for our bars, ensuring a satisfying texture and sustained energy.
  • Unsalted Peanuts: The star of our “peanut butter” flavor, adding richness, texture, and healthy fats. Make sure they’re unsalted to control the overall flavor.
  • Peanut Powder: This concentrated form of peanuts intensifies the nutty flavor without adding excess oil, making our bars even more peanut-buttery.
  • Strawberries, Fresh or Frozen: The “jelly” component! Fresh strawberries are ideal for their vibrant flavor, but frozen ones work beautifully when properly thawed.
  • Medjool Dates: These provide natural sweetness and a sticky binder, helping to hold the bars together while adding a wonderful chewy texture.
  • Pure Maple Syrup: Another natural sweetener that complements the dates and adds a subtle, rich sweetness to the bars.

That’s truly it! Just six humble ingredients that combine to create something truly extraordinary. You’ll be amazed at how much flavor and satisfaction you can get from such a minimal list.

Ingredient Insights: Tips for Perfect PB&J Bars

Hopefully, you already have most, if not all, of these simple ingredients on hand, making it incredibly easy to whip up a batch of these wholesome PB&J Baked Breakfast Bars. As the foundation of this recipe, I always reach for my trusted Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats. Their quality and hearty texture provide the perfect base for these satisfying bars, ensuring they’re both delicious and nourishing.

When it comes to the strawberries, I find that fresh strawberries deliver the most vibrant and appealing flavor. However, if fresh ones aren’t available, frozen strawberries are a perfectly acceptable alternative. Just be sure to thaw them completely before you incorporate them into the recipe. This step is crucial, as any excess liquid from frozen berries can make your dough too wet. To prevent watering down the mixture, gently drain away any surplus liquid from the thawed strawberries before adding them to your blender or food processor. For the peanuts, remember to use unsalted nuts! This gives you complete control over the flavor profile and ensures your bars aren’t overly salty. Finally, if you can’t get your hands on peanut powder, don’t fret! You can easily substitute it with your favorite protein powder for a similar boost and a delicious result.

Effortless Preparation: How to Make PB&J Baked Breakfast Bars

Making these delightful PB&J Baked Breakfast Bars is surprisingly simple, primarily relying on the efficiency of a high-speed blender or a food processor. This makes the preparation process quick and straightforward, perfect for even the busiest mornings.

You’ll begin by combining half of your robust oats with the unsalted peanuts and peanut powder in your chosen appliance. Process these ingredients until they transform into a fine, flour-like dust. This step ensures an even distribution of flavor and helps create the perfect texture for your bars. Next, introduce the pure maple syrup, the luscious strawberries, and the sticky Medjool dates into the mixture. If your dates seem a bit dry, a quick soak in warm water until they soften will make them much easier to blend and ensure a beautifully moist bar. For the absolute best textured bars, here’s a little secret: blend only half of the oats with the other ingredients initially, then stir in the second half. This technique adds a wonderful textural contrast, creating a heartier chew. And for an extra burst of “jammy” goodness, I love to fold in a few extra chunks of fresh strawberries right at the very end.

Once your mixture reaches the desired consistency – thick, sticky, but not overly dry or crumbly – it’s time to prepare for baking. Press the delicious batter evenly into a parchment-lined square baking dish. For a beautiful presentation and an extra touch of fruitiness, consider topping the mixture with additional chopped strawberries before baking. These bars are quite efficient, baking to golden perfection in just 20-25 minutes. You’ll know they’re ready when the top turns a lovely golden brown and the edges begin to gently pull away from the parchment paper. And yes, your kitchen will be filled with the most incredible aroma of peanut butter and jelly while they bake – it’s simply divine!

The most crucial step after baking is patience. Remove the pan from the oven and allow the bars to cool completely before you attempt to slice them into even portions. This cooling period is essential for them to set properly, ensuring clean cuts and perfectly structured bars. Voila! You’ve just created a batch of homemade, wholesome, and utterly delicious PB&J Baked Breakfast Bars ready for enjoyment.

Description

Six ingredient peanut butter & jelly breakfast bars that are naturally oil-free, gluten-free, and sweetened with dates and maple syrup. These vegan bars are perfect for a healthy and quick breakfast or snack!

Ingredients

  • 2 cups Bob’s Red Mill Gluten Free Organic Old Fashioned Rolled Oats, divided
  • 1 cup raw unsalted peanuts
  • ½ cup peanut powder
  • 1 heaping cup of hulled and diced strawberries, fresh or frozen + more for topping
  • ½ cup Medjool dates, pitted and chopped
  • ⅓ cup pure maple syrup

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch (or similar size) square baking dish with parchment paper, leaving an overhang on the sides for easy removal. Set aside.
  2. In a food processor or high-speed blender, combine half of the rolled oats, the unsalted peanuts, and the peanut powder. Process until these ingredients are well combined and resemble a fine, coarse flour.
  3. Next, add the pitted Medjool dates to the food processor and process for another 30 seconds, or until the mixture starts to come together and become sticky.
  4. Now, add the strawberries (fresh or thawed and drained frozen) and the remaining half of the oats to the food processor. Blend until the mixture is sticky and well combined. It should be thick enough to hold together when pressed, but not dry and crumbly. If the mixture seems too dry, you can add another date or two, a small handful of fresh strawberries, or 1 tablespoon of maple syrup, blending until the desired consistency is achieved.
  5. Once the mixture has reached your desired consistency, press it firmly and evenly into the parchment-lined 8×8 square pan. For an extra touch, you can top it with optional diced strawberries and a light sprinkle of oats before baking.
  6. Bake for 20-25 minutes, or until the top is beautifully golden brown around the edges and the bars feel firm to the touch. Your kitchen will smell absolutely incredible!
  7. Remove the pan from the oven and allow the bars to cool completely in the pan on a wire rack before attempting to cut them. Cooling is essential for the bars to set and slice cleanly.
  8. Store the cut bars in an airtight container in the fridge for 5-7 days. For longer-term storage, they freeze exceptionally well for several months. Simply thaw and enjoy!

Notes

*If your Medjool dates are firm or dried out, soak them in hot water for approximately 10 minutes until softened. Drain them thoroughly before adding to the recipe.
