As the chill of winter truly sets in, sometimes all you crave is a comforting, homemade treat. When the temperatures plummet and venturing outdoors feels like a monumental task, baking becomes more than just a pastime—it’s a warming ritual, a way to infuse your home with delightful aromas and a sense of coziness. My furry companion, Harper, and I have certainly been feeling the effects of the frosty weather, leading to a delightful stir-craziness that often culminates in a baking marathon. We’re talking about the kind of day that begins with mixing ingredients and ends with an energetic dance workout, purely to stay warm!

During one such recent cold spell, I found myself drawn back into the kitchen, creating not one, not two, but three batches of these incredible Peanut Butter and Jelly Crisscross Cookies. These aren’t just any cookies; they are an effortless, oil-free, gluten-free, and refined sugar-free revelation that truly hits the spot. In just about 10 minutes, with only 6 simple ingredients, you can have a batch of these wholesome cookies ready to enjoy. When the mercury drops, you’ll be glad to have these gooey, satisfying peanut butter and jelly cookies close at hand. So, let’s get baking and embrace the warmth, even when it’s anything but hot outside!

Why You’ll Fall in Love with These Healthy PB&J Cookies

Let’s be honest, they might not win any beauty contests compared to some elaborate confections. Their charm lies in their rustic, homemade appearance—and that’s part of their appeal! What they may lack in picture-perfect symmetry, they more than make up for in sheer ease of preparation and utterly delicious taste. After all, is there anything more universally comforting and satisfying than a perfectly baked peanut butter cookie? These take that classic comfort to the next level, twice-smashed with those iconic, happy haphazard fork marks that signal a truly authentic homemade treat.

These delightful cookies draw their inspiration from beloved thumbprint cookies, but with an ingenious simplification: instead of adding the jam after forming the cookie, we mix it right into the dough! It’s a game-changer, making the process even quicker and infusing every bite with that irresistible fruity sweetness. The result is a cookie that’s wonderfully peanut buttery, deliciously moist, pleasantly chewy, bursting with fruity flavor, and just mildly sweet – hitting all the right notes for a satisfying treat.

Naturally Sweetened & Wholesome Ingredients

One of the best aspects of these peanut butter and jelly crisscross cookies is their commitment to natural sweetness. We achieve that perfect balance of flavor using fresh berries and your favorite no-sugar-added fruit jam. For my batches, I absolutely adore the tart sweetness of fresh raspberries, but feel free to experiment with other vibrant berries like strawberries or blackberries—they would all be equally fantastic additions. When it comes to the jam, a classic strawberry is always a winner in my book, but don’t hesitate to use whatever no-sugar-added fruit spread you have on hand or prefer. A quick tip: always check the label to ensure your jam contains only fruit, with no added sugars. Many of my favorite brands achieve their sweetness naturally with apple juice, so keep an eye out for similar options!

As for the star ingredient, peanut butter, I typically reach for a crunchy variety to add an extra layer of texture to these delightful cookies. However, if you prefer a smoother experience, creamy peanut butter works just as beautifully, lending a wonderfully dreamy consistency. Whichever you choose, ensure it’s a natural peanut butter with minimal ingredients (just peanuts and salt, ideally) to keep these cookies as wholesome as possible.

The Power of Bob’s Red Mill: Flaxseed & Oat Flour Essentials

Peanut Butter & Jelly Crisscross Cookies by Flora & Vino

My pantry is consistently stocked with a few key ingredients that are absolutely essential for bringing my healthy baking visions to life, and many of them come from Bob’s Red Mill. Their Organic Golden Flaxseed Meal and Gluten Free Oat Flour are true staples. Most of my vegan baking adventures begin with a simple yet powerful combination: one tablespoon of Bob’s Red Mill Organic Golden Flaxseed Meal whisked together with three tablespoons of filtered water to create a “flax egg.” This mixture gels up beautifully, acting as my go-to, fool-proof egg substitute that ensures everything sticks together perfectly in all the right places, providing structure and moisture without the need for traditional eggs.

Then there’s the Gluten Free Oat Flour, which forms the hearty base of these crisscross cookies. Not only does it provide a wonderful texture and mass to the cookies, but it also packs a significant punch of fiber and protein, contributing to a more satisfying and nutritious treat. Its inherent gluten-free nature makes these cookies accessible to those with dietary sensitivities, ensuring everyone can enjoy them. If you happen to be out of oat flour, don’t fret; almond flour can serve as an excellent and suitable substitute, offering a similar tender crumb.

Serving Suggestions & Versatility

These Peanut Butter & Jelly Crisscross Cookies are incredibly versatile, making them a perfect addition to any part of your day. Imagine starting your morning with a couple of these wholesome cookies alongside your coffee or tea—they provide a burst of natural energy and a delightful taste that truly feels like a special breakfast. They’re equally fantastic as a quick, nutritious snack to power you through the afternoon slump, or as a satisfying, guilt-free dessert after dinner.

This recipe is also wonderfully kid-friendly! Get your little helpers involved in the kitchen, and then sneak these delicious cookies into their lunch boxes for a pleasant surprise, serve them up on after-school snack plates, or enjoy them together as a family dessert. I personally find them utterly exceptional when paired with a tall, frosty glass of almond milk, providing a classic combination that never disappoints. They’re also a fantastic quick bite to refuel after a sweaty workout, offering a boost of protein and healthy fats.

And here’s an exciting bonus: if you don’t have access to an oven, or simply don’t feel like turning it on, these versatile cookies can actually be enjoyed raw! The dough is perfectly safe and delicious unbaked. Either way, whether baked or raw, these peanut butter and jelly oat flour cookies are absolutely fabulous for any moment you find yourself craving the timeless combination of peanut butter and jelly in a delightful cookie form. And let’s be honest, when is that *not* the case?

Description

Easy peanut butter and jelly cookies with a hearty oat flour base. Naturally sweetened with berries and jam. Perfect for a healthy breakfast, snack, or dessert.

Ingredients

  • 1 flax “egg” (1 TBSP Bob’s Red Mill Organic Golden Flaxseed Meal + 3 TBSP filtered water)
  • 3/4 cup creamy or crunchy peanut butter
  • heaping 1/2 cup fresh berries (I like raspberries!)
  • 1/2 cup no-sugar-added fruit jelly
  • 1 1/4 cup Bob’s Red Mill Gluten-Free Oat Flour

Instructions

  1. Preheat your oven to 350°F (175°C) and meticulously line a large baking sheet with parchment paper. This ensures easy removal and prevents sticking.
  2. In a spacious mixing bowl, combine the Bob’s Red Mill Organic Golden Flaxseed Meal with filtered water to create your flax “egg.” Stir thoroughly and set it aside for at least 5 minutes to allow it to thicken and achieve a gel-like consistency. This is crucial for binding the cookie dough.
  3. Once the flax egg has gelled, add your fresh raspberries (or other berries of choice) to the bowl. Gently smash them with a fork until they release their juices and integrate slightly with the flax mixture. This adds natural sweetness and a burst of fresh fruit flavor.
  4. Next, incorporate the peanut butter and the no-sugar-added fruit jelly into the bowl. Mix everything together really well, ensuring that the peanut butter, jam, and berry mixture are thoroughly combined into a cohesive and flavorful base.
  5. Gradually add the Bob’s Red Mill Gluten-Free Oat Flour to the wet ingredients. Mix until everything is perfectly combined, and no visible traces of dry flour remain. The dough should be noticeably thick, yet pliable and easy to scoop – a perfect consistency for forming cookies.
  6. Using a standard cookie-dough scoop (approximately 1.5-inch tablespoon size), scoop out portions of the dough. This helps ensure your cookies are uniform in size and bake evenly.
  7. Gently roll each scooped portion of dough between your palms to form smooth, round balls. Place these balls onto your prepared baking sheet, leaving adequate space between each. Then, take a fork and gently flatten each ball twice, pressing in opposite directions to create the classic criss-cross pattern. Continue this process until all the cookie dough has been used, which should yield about 16-18 delicious cookies.
  8. Transfer the baking sheet to your preheated oven and bake the cookies for 10-12 minutes. Look for them to turn a light golden brown around the edges underneath; this indicates they are perfectly baked. Remember, the cookies will still be quite soft when you remove them from the oven. It’s essential to let them cool on the baking sheet for about 10 minutes before attempting to move them. This cooling time allows them to firm up and prevents them from crumbling.
  9. Once completely cooled, store your Peanut Butter & Jelly Crisscross Cookies in an airtight container in the refrigerator for up to one week to maintain their freshness and chewiness. For longer storage, these cookies freeze beautifully. Simply place them in a freezer-safe bag or container, and they’ll be ready to enjoy whenever a craving strikes.
