Life in my new townhouse has brought a fresh wave of inspiration, starting with my journey into becoming a proud plant parent. The main level, bathed in natural light from three sets of expansive windows, exudes a bright, airy ambiance. With the last of the moving boxes finally unpacked, my thoughts naturally turned to personalizing this beautiful space.

While art for the walls and new furniture are still on my wishlist (and budget!), I quickly realized I had the perfect canvas for something else: houseplants! Embracing this new endeavor, I did what any modern enthusiast would do—I turned to Instagram for advice. My burning question: which indoor plants are truly low-maintenance, resilient enough to thrive under a new “plant mom’s” care?

Armed with a wealth of helpful suggestions, a friend and I embarked on a delightful trip to the local nursery. We returned with an assortment of new green companions: three charming succulents, a stately snake plant, a soothing aloe plant, and a vibrant croton! As I type, they sit gracefully on their plant stands, bringing a quiet calm and comforting presence to my home. Their stoic stillness and vibrant greenery inspired today’s recipe: these delightful Roasted Brussels Sprouts with Hazelnut Butter Sauce.

This recipe celebrates fresh, wholesome ingredients and embodies the essence of plant-based eating. All you need to get started is a bag of fresh Brussels sprouts and a jar of quality hazelnut butter!

Essential Ingredients for Irresistible Roasted Brussels Sprouts with Hazelnut Butter Sauce

Have you ever had a “lightbulb moment” about something you’ve fundamentally misunderstood for years? For me, that revelation came recently when I realized I’d been spelling “Brussels sprouts” incorrectly my entire life, often missing that crucial ‘S’ at the end! Despite my occasional spelling mishaps, my appreciation for these miniature cabbages has always been unwavering. They are, without a doubt, one of my favorite vegetables to roast, transforming into savory, tender bites with crispy edges.

When paired with a rich, subtly sweet, and wonderfully spicy sriracha hazelnut butter sauce, these roasted gems reach an unparalleled level of deliciousness. This combination elevates a simple vegetable into a gourmet side dish that’s both comforting and exciting. Whether you’re a seasoned Brussels sprouts fan or looking for a new way to enjoy them, this recipe is a game-changer.

Crafting Your Perfect Roasted Brussels Sprouts with Hazelnut Butter Sauce

The beauty of roasted Brussels sprouts lies in their simplicity. You don’t need to do much to make them incredibly flavorful. The most hands-on part of the process is the initial preparation, which ensures they cook evenly and achieve that coveted crispy texture.

Here’s how I prepare them for roasting: First, give the sprouts a thorough rinse under cold water. Next, trim the tough ends of the stems and halve each sprout. This creates more surface area for caramelization and ensures faster cooking. Gently remove any loose or yellowed outer leaves; these tend to burn and can impart a bitter taste. Finally, rinse them once more and pat them completely dry with a clean towel or paper towels. This crucial step is key to achieving maximum crispiness in the oven.

Once prepped, spread the Brussels sprouts evenly on a baking sheet lined with parchment paper. Season them generously with a drizzle of avocado oil, a good pinch of Himalayan sea salt, and freshly ground black pepper. If you’re aiming for an oil-free dish, simply omit the avocado oil—they are still wonderfully delicious when roasted without it! Toss the sprouts thoroughly to ensure they are evenly coated with the seasoning. Bake them in a preheated oven for 20-25 minutes, or until the exteriors are beautifully browned and crispy, and the insides are tender when pierced with a fork. A pro tip: try to resist the urge to snack on all of them directly from the baking sheet before the sauce is ready!

The Secret to Our Sauce: Decadent Hazelnut Butter

While your Brussels sprouts are roasting to perfection, it’s the ideal time to whisk together your incredible Hazelnut Butter Sauce. Have you ever experienced the rich, unique flavor of hazelnut butter? It’s a game-changer!

For this sweet and savory sauce, I specifically use Georgia Grinders Hazelnut Butter. I fell in love with this product after trying a spoonful at the Nat Products Expo West last spring, and I’ve been eager to incorporate it into a recipe ever since. The ingredient list speaks volumes: each jar contains only roasted hazelnuts and sea salt, guaranteeing a pure and intense nutty flavor. This quality is paramount for the depth of our sauce.

The hazelnut butter’s robust, roast-y notes pair exquisitely with the tangy heat of sriracha and the natural sweetness of maple syrup, creating an effortlessly delicious sauce that complements roasted vegetables beautifully. I prefer to whisk this sauce by hand, allowing small, delightful chunks of hazelnut to remain, adding a lovely textural element. The sauce will be quite thick initially, so gradually add unsweetened almond milk, one tablespoon at a time, until it reaches your desired drizzly consistency.

Remember, this recipe is highly customizable to your palate! If you crave more heat, don’t hesitate to add an extra touch of sriracha. For those who prefer a sweeter profile, a bit more maple syrup will do the trick. Adjust to your taste and enjoy the dynamic flavors!

Serving Suggestions for Roasted Brussels Sprouts with Hazelnut Butter Sauce

These Roasted Brussels Sprouts with Hazelnut Butter Sauce are incredibly versatile and can be enjoyed in numerous ways. They make an excellent fall or winter side dish, bringing vibrant flavor and texture to any meal. Consider pairing them with a hearty plant-based entree like a lentil loaf, roasted root vegetables, or a savory grain bowl for a complete and satisfying meal.

For a more casual and cozy experience, enjoy them straight from the oven as a quick, flavorful 1-pan snack, dipping each tender sprout directly into the luscious sauce. The recipe is designed to serve 2-3 people, making it perfect for a small gathering or a weeknight meal. However, it’s incredibly easy to scale up: simply double or triple the recipe to accommodate more guests or to have delicious leftovers.

The same applies to the hazelnut butter sauce – feel free to make a larger batch! Drizzle the warm Brussels sprouts generously with the sauce immediately after they come out of the oven to ensure maximum flavor absorption. For an added layer of texture and visual appeal, I love to sprinkle mine with toasted sesame seeds, which provide a delightful crunch and nutty finish. Enjoy these flavorful sprouts, knowing you’re nourishing your body with a vibrant, plant-based meal!

Creamy Cauliflower Mashed Potatoes with Almond Butter “Gravy” served on a plate, garnished with fresh herbs.

Thanksgiving is just around the corner, friends! Last night, during our virtual family game night, we eagerly plotted all the fun activities we’ll share in person next week. Our plans include the annual Thanksgiving walk, lively games, cozy movie sessions, and, of course, an abundance of delicious food.

My parents, ever so gently, nudged me away from bringing my usual sweet potato casserole to our holiday feast this year. It seems I might be one of the few passionate sweet potato lovers at the table! While my affection for sweet potatoes is no secret, and I often substitute them for regular potatoes in recipes, perhaps there’s a time and place for classic spuds in a potato dish, wouldn’t you agree? Like, for instance, in a comforting bowl of mashed potatoes. So, how about we elevate that classic with a twist: Cauliflower Mashed Potatoes with Almond Butter “Gravy”? No one said I couldn’t add a healthy helping of cauliflower!

These Cauliflower Mashed Potatoes are guaranteed to be a hit with everyone at your holiday table this year. This lightened-up version features a harmonious blend of creamy Yukon potatoes and tender cauliflower, all mashed to perfection and served with a lusciously smooth almond butter-based gravy. Get ready to celebrate all the delightful side dishes!

Assorted ingredients for Cauliflower Mashed Potatoes including cauliflower, Yukon potatoes, salt, pepper, and almond milk.

Key Ingredients for Creamy Cauliflower Mashed Potatoes

To prepare these delightful Cauliflower Mashed Potatoes, you’ll need a handful of simple, wholesome ingredients:

  • Yukon gold potatoes
  • Fresh cauliflower florets
  • Garlic powder, for aromatic depth
  • Tahini, to add creaminess without oil
  • Unsweetened almond milk, for desired consistency
  • Himalayan sea salt, to enhance flavors
  • Ground black pepper, for a gentle kick
  • Fresh parsley, for garnish and freshness

That’s all it takes to create a surprisingly flavorful and healthy mashed potato dish!

Step-by-Step: Crafting Your Cauliflower Mashed Potatoes

These cauliflower mashed potatoes are not just one or the other; they represent a brilliant fusion of both! They capture all the beloved flavor and comforting qualities of classic mashed potatoes, but with a lighter, healthier cauliflower twist. The clever inclusion of tahini ensures they remain entirely oil-free while still being wonderfully moist, fluffy, and exceptionally creamy. This makes them a fantastic alternative for those seeking a nutritious yet indulgent side dish.

To begin, let’s prepare our vegetables. Add the diced Yukon potatoes and fresh cauliflower florets to a large pot. Cover them with approximately one inch of water, ensuring all vegetables are submerged. Bring the pot to a rolling boil and cook the potatoes and cauliflower for 20-25 minutes, or until they are unmistakably fork-tender and very soft. This thorough cooking is essential for achieving a smooth, creamy mash.

Ingredients for a Rich Almond Butter Gravy

While your potatoes and cauliflower are cooking, take the opportunity to prepare your delicious almond butter gravy. This creamy, savory topping will perfectly complement your mashed potatoes.

Here’s what you’ll need for the Almond Butter Gravy:

  • Georgia Grinders Original Almond Butter, for a rich, nutty base
  • Fresh lemon juice, to add brightness and acidity
  • Water or unsweetened almond milk, to achieve the desired consistency
  • Ground black pepper, for a subtle warmth
  • Himalayan sea salt, to balance and enhance flavors

This almond butter gravy is incredibly versatile and can be drizzled over a variety of dishes, from roasted vegetables to grain bowls or even plant-based proteins. However, I must confess, I have a particular fondness for it generously poured over these Cauliflower Mashed Potatoes!

Preparing Your Velvety Almond Butter Gravy

To create this smooth and creamy gravy, simply combine all the ingredients in a high-speed blender or food processor. Blend until the mixture is perfectly smooth and has a luxurious, creamy texture. Start with the smaller amount of water or unsweetened almond milk and add more in small, one-tablespoon increments as needed, until you reach your desired pourable consistency. The goal is a gravy that is thick enough to cling to your potatoes but still flows beautifully.

If, by chance, the gravy becomes too thin, simply add a little more almond butter to thicken it up. I highly recommend Georgia Grinders Original Almond Butter for this recipe; its pure composition of roasted almonds and a hint of sea salt makes for an incredibly flavorful and robust gravy. This creates a thick, nutty, and roasted gravy that is completely vegan, gluten-free, grain-free, and contains no added oils.

Finally, taste the Almond Butter Gravy and adjust the seasoning with a pinch of Himalayan sea salt and black pepper to your preference. Since the almond butter already contains a hint of sea salt, you likely won’t need much additional seasoning.

Ingredients for Almond Butter “Gravy” laid out: almond butter, salt, pepper, lemon, and almond milk.

Set your luscious gravy aside while we return to our perfectly cooked vegetables. Once the potatoes and cauliflower are wonderfully fork-tender, carefully transfer them to a large mixing bowl. Using a potato masher or even a sturdy fork, begin to mash the vegetables. They should yield easily and effortlessly. Because the potatoes and cauliflower share a similar pale hue, the mash will look cohesive and beautifully “mashed potato”-esque, tricking even the most discerning palates!

Fun fact: I’ve never actually owned a potato masher myself, so I’ve always tackled the mashing with a good old-fashioned fork – proof that you don’t need fancy tools for delicious results! Once mashed, incorporate the garlic powder, tahini, unsweetened almond milk, sea salt, and black pepper. Continue mashing until all ingredients are thoroughly combined and the texture is to your liking.

Alternative Mashing Techniques and Serving Your Masterpiece

Continue mashing the potatoes and cauliflower until you achieve your desired consistency – consider it a mini therapy session! Mash more vigorously for an ultra-creamy, smooth texture, or mash less for a rustic mash with delightful small chunks, which is how I personally enjoy mine. The beauty of this recipe is its adaptability to your preference.

Alternatively, for an even smoother, silkier texture reminiscent of a velvety puree, you can transfer the entire mixture into a high-speed blender or food processor and blend until perfectly uniform. If the potato and cauliflower mixture appears too thick, simply add more almond milk, one tablespoon at a time, until it reaches the ideal consistency. Once the texture is just right, taste the mixture and make any final adjustments to the salt and pepper as desired.

After that, it’s time to serve your culinary creation! Serve the mash warm, plated elegantly, and generously topped with fresh parsley for a burst of color and herbaceousness. Finish with a lavish drizzle of the homemade Almond Butter Gravy. Yum! This dish is a true testament to how simple, plant-based ingredients can create something extraordinary.

Creative Ways to Serve Cauliflower Mashed Potatoes

These Cauliflower Mashed Potatoes with Almond Butter “Gravy” are a creative and flavorful plant-based side dish that’s perfect for any occasion. They make an excellent accompaniment to a hearty plant-based main course, or they can take center stage as a standout component of your holiday spread. This recipe is particularly wonderful for anyone seeking a lighter, yet equally satisfying, variation on traditional mashed potatoes.

Beyond being delicious, this dish is entirely vegan, gluten-free, grain-free, and contains no added oils, making it a healthy choice that doesn’t compromise on flavor or texture. For added convenience, these mashed potatoes can be prepared in advance. Store the Cauliflower Mashed Potatoes and the Almond Butter Gravy separately in airtight containers in the refrigerator. When you’re ready to serve, simply reheat them separately before combining. Leftovers can be stored and reheated for several days, making meal prep a breeze.

Try drizzling it over other roasted root vegetables, adding a creamy touch to stir-fries, or pairing it with baked tofu or tempeh for an extra boost of flavor. Description

Perfectly roasted Brussels sprouts served with a unique, spicy oil-free hazelnut butter sauce and a sprinkle of sesame seeds. This incredible dish is ideal as a delicious, healthy winter side.

Ingredients

Roasted Brussels Sprouts

  • 1 lb. Brussels sprouts, rinsed, trimmed, and sliced in half
  • 1 TBSP avocado oil (optional, omit for oil-free)
  • Himalayan sea salt and freshly ground black pepper, to taste

Hazelnut Butter Sauce

  • 5 TBSP Georgia Grinders Hazelnut Butter (Use “FLORA20” for 20% off your Georgia Grinders purchase!)
  • 3 TBSP pure maple syrup
  • 1 TBSP sriracha
  • 12 TBSP unsweetened almond milk (optional, for thinning sauce)
  • Sesame seeds, for topping

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Place the rinsed and trimmed Brussels sprouts on the parchment-lined baking sheet. Toss them with avocado oil (if using), Himalayan sea salt, and black pepper until evenly coated. Roast for 20-25 minutes, or until the sprouts are fork-tender on the inside and beautifully browned and crispy on the outside.
  3. While the Brussels sprouts are roasting, prepare the hazelnut sauce. In a small bowl, combine the hazelnut butter, maple syrup, and sriracha. Whisk well to combine. The sauce should be thin enough to drizzle; if it’s too thick, add unsweetened almond milk in small 1 TBSP increments until the desired consistency is reached.
  4. Once the Brussels sprouts are done, remove them from the oven and transfer them to a serving bowl or plate. Drizzle generously with the hazelnut butter sauce and sprinkle with optional sesame seeds for added crunch. Serve immediately for the best flavor and texture.
  5. Store any leftover Brussels sprouts and sauce separately in airtight containers in the refrigerator for 3-5 days. To reheat, warm the Brussels sprouts in the microwave or oven, and allow the sauce to come to room temperature for about 30 minutes before serving.
