Description

5-ingredient beet brownie bliss balls made with cacao powder, nut butter, and roasted beets! Perfect for a healthy snack, dessert, or pre/post workout fuel.


Ingredients

  • 2/3 cup oat flour
  • 1 small LoveBeet, or sub one cooked and peeled roasted or steamed beet
  • 1/2 cup nut butter
  • 3 TBSP raw cacao powder (or sub chocolate protein powder or a blend of both!)
  • 810 gooey Medjool dates, pitted

For rolling (optional)

  • hemp hearts
  • raw cacao powder


Instructions

  1. Prepare for Blending: Gather all your ingredients. Ensure your roasted beet is peeled and roughly chopped if not already in small pieces. Pit your Medjool dates if they aren’t already pitted. This ensures a smooth blending process.
  2. Combine Ingredients: Add the oat flour, roasted beet, nut butter, raw cacao powder, and pitted Medjool dates into a high-speed blender or a powerful food processor. Start by pulsing the mixture to break down the dates and beet.
  3. Blend Until Smooth: Continue to blend on a medium-high setting. You’ll need to stop and scrape down the sides of the blender or food processor frequently to ensure all ingredients are thoroughly combined. The mixture should eventually come together into a thick, sticky “dough.” It might look crumbly at first, but with consistent blending and scraping, it will form a cohesive ball.
  4. Roll the Bliss Balls: Once your dough is ready, use your hands or a small cookie scoop (about 1 tablespoon in size) to portion out the mixture. Roll each portion into a smooth, compact ball. If the mixture is too sticky, slightly dampen your hands.
  5. Optional Coating: For an extra touch, roll the finished balls in raw cacao powder for a deeper chocolate flavor, or in hemp hearts for added texture and nutrients. You can also try shredded coconut or chopped nuts!
