Hello, wonderful readers!
Life has a funny way of pushing us beyond our comfort zones, and sometimes, those pushes lead to the most delightful discoveries. This past week, I ventured into new territory by going “LIVE” on Instagram for the very first time. As someone who’s usually quite comfortable behind the camera lens, transitioning to video felt like stepping onto a wobbly tightrope! I was, understandably, a bundle of nerves—checking the lighting countless times and reapplying lip balm like it was a vital pre-show ritual. Even Harper, my trusty sidekick, decided it was a good time to abandon me on the couch just seconds before going live!
Despite the initial jitters, it turned out to be an incredibly rewarding experience. I had a fantastic conversation with one of my favorite brands, which quickly shifted my focus from my own self-consciousness to the message I wanted to convey. It was a powerful reminder that growth often happens when we dare to do things that feel a little uncomfortable. And speaking of delightful discoveries and pushing boundaries, I have just the recipe to share with you today: these incredibly decadent Hot Chocolate Overnight Oats!
You are going to absolutely adore this simple yet luxurious breakfast blend, especially when it’s paired with our unbelievably creamy, three-ingredient chocolate cashew cream. Imagine treating yourself to the cozy flavors of hot chocolate first thing in the morning, all while enjoying a wholesome and satisfying meal. So, let’s leave our comfort zones behind and dive into this delicious recipe!
Embrace the Comfort: Hot Chocolate in Your Overnight Oats
Can you believe how quickly time flies? It feels like just yesterday we were basking in the summer sun, and now, Christmas is less than a month away! This realization truly hit me when my hairdresser handed me a Christmas card during my weekend appointment. I was utterly speechless in the spinning chair, not only by the sudden awareness that the holidays are indeed upon us but also by the embarrassing fact that I hadn’t even started writing my own cards yet. Here I was, metaphorically patting myself on the back for simply having purchased them before December, and she was already ahead of the game!
Between holiday preparations, work, and everyday life, things have been undeniably hectic. I’m sure you can relate, my friend. In the midst of all this delightful chaos, finding moments of calm and comfort is essential. And what better way to do that than with a breakfast that feels like a warm hug? That’s where these Hot Chocolate Overnight Oats come in. This recipe is more than just a meal; it’s a small act of self-care, a moment of indulgence that takes minimal effort but delivers maximum satisfaction. It’s the perfect solution for those crazy mornings when you need something quick, nourishing, and utterly delicious to fuel your day.
The Rise of Modern Oats: Why We Love Overnight Oats
Lately, my kitchen obsession has been all about overnight oats. While my love for hot chocolate is a constant, combining it with the convenience of overnight oats has been a game-changer for my morning routine. What truly excites me about this method is how quickly these oats come together, requiring virtually no cooking in the morning. Even more, I’m discovering that I actually prefer the taste and texture of soaked oats over their classic stovetop counterparts.
The magic of overnight oats lies in the soaking process. Instead of cooking, the oats absorb liquid overnight, which keeps their natural integrity intact. This prevents the common issue of the “unattractive sludge” that can sometimes occur when oats are cooked on the stovetop. The result is a delightfully creamy yet slightly chewy texture that is far more appealing and satisfying. This method also helps to break down starches, making the oats easier to digest and allowing for better nutrient absorption, giving you a healthy boost to start your day.
I recently had the pleasure of trying Modern Oats, and I was instantly impressed. Their “Just Oats” blend, as the name suggests, is pure, unadulterated oats—exactly what I look for. They come in convenient instant cups, making them incredibly practical for grab-and-go breakfasts, whether you’re heading to work, school, or simply enjoying a busy morning at home. Furthermore, a crucial aspect for me is their certified gluten-free status, which is always a top priority when choosing my oatmeal. This ensures that everyone can enjoy the wholesome goodness of these hot chocolate oats without worry.
Serving Up Bliss: How to Enjoy Your Hot Chocolate Overnight Oats
These Hot Chocolate Overnight Oats are designed to be your go-to quick breakfast, especially on those mornings when life feels a little too chaotic. They offer a comforting embrace that can transform even the busiest start into a moment of cozy indulgence. The beauty of this recipe lies in its versatility and ease of preparation, making it a staple for anyone looking for a delicious and nutritious meal prep option.
If you’re particularly short on time or prefer a simpler approach, feel free to skip the Chocolate Cashew Cream. The rich, chocolatey oats are absolutely divine on their own and provide a satisfying flavor profile that will still brighten your morning. However, if you have a few extra minutes and crave that extra layer of decadence, the cashew cream is highly recommended to elevate the experience.
One of the best things about overnight oats is the choice of temperature. You can enjoy them chilled straight from the refrigerator, which is wonderfully refreshing, especially when topped with cold berries. Alternatively, for a truly authentic “hot chocolate” experience, you can gently warm them. A minute or two in the microwave will transform them into a comforting, warm breakfast, perfect for a chilly morning. Personally, I love to eat mine cold, piled high with a generous serving of fresh berries—strawberries or raspberries add a lovely tang—and, of course, an abundance of shaved dark chocolate. The darker the chocolate, the better, as it adds a sophisticated bitterness that perfectly complements the sweetness of the oats and cream.
So, whether you’re rushing out the door or savoring a slow morning, these Hot Chocolate Overnight Oats are a delightful and versatile breakfast that promises comfort and flavor in every spoonful. Enjoy!

Description
Cozy hot chocolate overnight oats with a decadent chocolate cashew cream. This vegan and gluten-free breakfast is perfect for a quick, healthy, and satisfying meal prep. Serve chilled or warm for a delicious start to any day!
Ingredients
For the Hot Chocolate Overnight Oats
- 1 cup Modern Oats Just Oats (or your favorite certified gluten-free rolled oats)
- 1 1/2 cups unsweetened almond milk (or other plant-based milk)
- 1/2 cup unsweetened almond milk yogurt (or other plant-based yogurt for extra creaminess)
- 2 TBSP chocolate protein powder (optional, for an added protein boost)
- 2 TBSP raw cacao powder (for rich chocolate flavor and antioxidants)
- 1 TBSP pure maple syrup (or other liquid sweetener like agave)
- 4 tsp chia seeds (for thickening and omega-3s)
- 1/2 tsp ground cinnamon (for warmth and spice)
For the Decadent Chocolate Cashew Cream
- 1/2 cup raw cashews, soaked in hot water for at least 20 minutes (or overnight in cold water), then thoroughly drained and rinsed
- 2–3 large Medjool dates, pitted (adjust to taste for sweetness, or substitute with 1-2 TBSP maple syrup)
- 2–3 TBSP raw cacao powder
- 1/2 cup unsweetened almond milk (start with 1/2 cup and add more as needed to reach desired consistency)
For Serving (Optional Toppings)
- unsweetened almond milk yogurt
- fresh berries (strawberries, raspberries, or blueberries)
- shaved dark chocolate (the darker, the better!)
- a sprinkle of extra cacao powder
- a drizzle of maple syrup
Instructions
- In 2-3 individual mason jars (or airtight containers), divide all the Hot Chocolate Overnight Oat ingredients. Stir everything gently but thoroughly to ensure the chia seeds are well distributed and no dry clumps of oats remain. Seal the jars.
- To prepare the luxurious Chocolate Cashew Cream, combine the soaked and drained cashews, pitted Medjool dates (or maple syrup), cacao powder, and 1/2 cup unsweetened almond milk in a high-speed blender. Blend until the mixture is completely smooth and creamy, stopping to scrape down the sides of the blender as needed. If the cream is too thick, add more almond milk, one tablespoon at a time, until your desired consistency is reached. Transfer this rich cream to a separate airtight container.
- Store both the Hot Chocolate Overnight Oats and the Chocolate Cashew Cream separately in the refrigerator overnight (or for a minimum of 4 hours) to allow the oats to soften and the flavors to meld beautifully.
- In the morning, open your jar of overnight oats. Give them a gentle fluff with a spoon. Then, generously top your oats with the prepared Chocolate Cashew Cream. Add your choice of fresh berries, a dollop of almond milk yogurt, and a sprinkle of decadent shaved dark chocolate for an extra special touch.
- These meal-prepped overnight oats can be stored in the refrigerator for up to one week, making them an ideal healthy breakfast solution for busy schedules. Enjoy the convenience and deliciousness all week long!
