  • ½ cup sunflower seed butter (or use almond butter or another neutral nut/seed butter of your choice)
  • ½ cup pure pumpkin purée (ensure it’s not pumpkin pie filling!)
  • ¼ cup pure maple syrup (adjust to your preferred sweetness)
  • 1 tsp high-quality pumpkin pie spice 
  • ½ tsp baking powder
  • ½ cup Bob’s Red Mill Super-Fine Almond Flour


Instructions

  2. Add all ingredients, *except* the almond flour, to a high-speed blender. Pulse until the mixture is thoroughly combined and smooth. Be sure to stop and scrape down the sides of the blender with a rubber spatula as needed to ensure an even consistency, with no whole chickpeas remaining. The resulting mixture should resemble a thick, creamy, and sticky dough.
  3. Transfer the blended contents from the blender into a medium-sized mixing bowl. Gradually stir in the Bob’s Red Mill Super-Fine Almond Flour until it is well-combined and the dough becomes scoopable. 
  4. Using a cookie scoop (approximately 1.5 tablespoons), scoop uniform balls of dough and place them onto the prepared parchment-lined cookie sheet. The batter should yield about 16 to 18 cookies, depending on their size.
  5. Transfer the cookie sheet to the preheated oven and bake for 20-25 minutes. The cookies are done when they are golden brown on the bottom and firm to the touch. Remove from oven and let them cool briefly on the baking sheet before serving.
