Ingredients

  • 1 pint strawberries, rinsed and patted dry
  • 8 oz vegan dark chocolate (70% or higher), melted
  • 1 bag Bare Snacks Chocolate Coconut Chips


Instructions

  1. Prepare a baking sheet with parchment or wax paper and set aside.
  2. Rinse the strawberries under running water and pat them thoroughly dry with a clean towel. It’s crucial to have very dry strawberries before proceeding to the next step, as any moisture can cause the chocolate to seize.
  3. Add the vegan dark chocolate to a small saucepan over medium-low heat. Warm until the chocolate is fully melted and smooth, stirring often to prevent burning. Alternatively, you can melt the chocolate using a double boiler or in a microwave-safe bowl in 30-second intervals, stirring between each.
  4. While the chocolate is melting, prepare your crunchy topping. Add the chocolate coconut chips to a high-speed blender or food processor and pulse until you have smaller, textured pieces – avoid blending too finely, as some texture is desired for that satisfying crunch. If you don’t have a blender, you can easily crush them with your hands or by placing them in a Ziploc bag and using a rolling pin. Transfer the crushed chocolate coconut chips to a large, shallow plate and set it beside your prepared baking sheet.
  5. Once the chocolate is melted, transfer it to a small, deep bowl. This depth will make it easier to fully dip the strawberries. Place this bowl next to the plate of crushed chocolate coconut chips.
  6. One by one, gently hold each strawberry by its stem (or the green leafy top) and dip it into the melted chocolate. Swirl the strawberry slightly to ensure it’s well coated. Allow any excess chocolate to drip off back into the bowl, then immediately transfer the chocolate-dipped strawberry to the plate of crushed coconut chips. Carefully roll the strawberry in the chips until all sides are evenly covered, pressing lightly to adhere.
  7. Finally, place the covered strawberry on the parchment-lined baking sheet to set up. Repeat this process with the remaining strawberries, chocolate, and chocolate coconut chips until all are used.
  8. Allow the strawberries to harden at room temperature for about 15-20 minutes, then refrigerate them until serving to keep them firm and fresh. For longer-term storage, freeze them in an airtight container for delightful chilled treats for up to a month.
