Ingredients

Brownie Layer

  • 2 flax eggs (2 TBSP ground flaxseed + 5 TBSP filtered water)
  • 1/2 cup unrefined coconut sugar 
  • 1/4 cup pure maple syrup 
  • 1/2 cup roasted cashew butter
  • 3/4 tsp baking powder
  • 1/2 cup unsweetened cocoa powder
  • 1 cup almond flour

Buckeye Layer

  • 1 cup cashew butter
  • 1/4 cup pure maple syrup

Chocolate Layer

  • 1 1/2 cup (1 bag) Hu Kitchen Baking Gems (or sub dark chocolate)
  • 2 TBSP unsweetened almond milk


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, allowing some overhang on the sides for easy removal later. Set this prepared dish aside.
  2. In a large mixing bowl, prepare your flax eggs. Combine the ground flaxseed and filtered water, then whisk thoroughly with a fork until well combined. Let the mixture sit for about 5 minutes; it will thicken into a gel-like consistency, acting as your vegan egg binder.
  3. To the same bowl with the flax eggs, add the unrefined coconut sugar, pure maple syrup, and roasted cashew butter. Mix all these wet ingredients together really well until you have a smooth, homogeneous mixture.
  4. Now, it’s time to incorporate the dry ingredients. Sift in the baking powder, unsweetened cacao powder, and almond flour into the wet mixture. Gently fold and mix until all ingredients are thoroughly combined and there are no visible clumps of flour. Be careful not to overmix.
  5. Carefully transfer the rich brownie batter into your prepared 8×8 inch baking dish. Use a spatula to spread the batter into an even layer, ensuring it fills the pan uniformly.
  6. Bake for 17-22 minutes. Keep a close eye on them; the brownies are done when they begin to pull away slightly from the edges of the pan. IMPORTANT NOTE: They will appear slightly under-baked and very soft when first removed from the oven, which is exactly what you want for an incredibly gooey, fudgy texture.   9. To create the luxurious chocolate layer, add your Hu Kitchen Baking Gems (or other dark chocolate) to a small saucepan. Place the saucepan over very low heat and allow the chocolate to melt slowly, stirring often to prevent it from scorching. Once the chocolate is fully melted and smooth, remove it from the heat and stir in the unsweetened almond milk. The almond milk will help to thicken the chocolate slightly, transforming it into a beautiful, glossy chocolate ganache spread.
  10. Carefully spread the prepared chocolate ganache evenly over the cashew butter “buckeye” layer, using a spatula to ensure full coverage.
