Description

Easy vegan, gluten-free, and a grain-free everything bagels with almond and tapioca flour. Perfect for breakfast, brunch, or a snack.


Ingredients

  • 3 1/2 cups super fine almond flour
  • 1/2 cup tapioca flour
  • 2 tsp baking powder
  • 4 TBSP bagel seasoning* (plus more for topping)
  • 2 TBSP sunflower seeds
  • 1 cup warm filtered water
  • 1 TBSP lemon juice
  • 2 TBSP maple syrup
  • avocado oil, for brushing


Instructions

  1. Preheat oven to 350°F (175°C) and lightly spray a donut pan with nonstick spray to prevent sticking.
  2. In a large mixing bowl, thoroughly whisk together the super fine almond flour, tapioca flour, baking powder, 4 tablespoons of everything bagel seasoning, and sunflower seeds. Ensure there are no clumps for a smooth dough consistency.
  3. Gradually add in the warm filtered water, fresh lemon juice, and pure maple syrup. Mix well until all ingredients are fully combined and the dough reaches a thick, yet spreadable consistency. It should be easy to scoop but not runny.
  4. To ensure seasoning on both sides, sprinkle a small amount of extra bagel seasoning and sunflower seeds into the cavity of each donut-shape on the prepared pan. Next, scoop a heaping tablespoon of the bagel batter into each crevice. For a more classic, larger bagel, heap the dough slightly over the edge of the pan. For smaller, thinner bagels, spread the dough until it is just flush with the pan. Use damp fingers or a small spatula to evenly distribute and smooth the batter.
  5. Baking times will vary depending on the size of bagels you chose. For larger bagels, bake for 25-30 minutes. For smaller bagels, bake for approximately 20 minutes. At the halfway point of baking, carefully remove the pan from the oven. Gently brush the top of each bagel with a light coating of avocado oil and sprinkle with a bit more everything bagel seasoning, if desired, to enhance flavor and crust. If you don’t have store-bought everything bagel seasoning on hand, you can easily make your own. Combine 2 tablespoons of poppy seeds, 2 tablespoons of white sesame seeds, 2 tablespoons of black sesame seeds, 2 tablespoons of granulated or minced dehydrated onion, 2 tablespoons of granulated garlic, and 1 teaspoon of Himalayan sea salt. Mix well, and your homemade seasoning is ready!
