It’s a wholesome, easy-to-make, and incredibly flavorful vegan meal, perfect for a cozy dinner or healthy meal prep. Naturally gluten-free and refined-sugar-free, it’s a bowl of pure deliciousness that will nourish your body and excite your taste buds.


Ingredients

For the Coconut Curried Rice:

  • 2 cups uncooked jasmine rice, thoroughly rinsed
  • 1 (13.5 oz) can lite coconut milk
  • 1 3/4 cups filtered water
  • 2 tsp yellow curry powder (adjust to taste for desired curry intensity)
  • ¼ tsp Himalayan sea salt (or to taste)

For the Zesty Chili Garlic Sauce:

  • 2 TBSP chili garlic paste (or sriracha for a milder heat)
  • 12 TBSP coconut aminos (start with 1, add more for extra umami/sweetness)
  • 2 tsp pure maple syrup (or agave nectar)
  • Juice of 1/2 fresh lime (about 1-2 TBSP, adjust for desired tang)

For the Seared Tofu and Roasted Vegetables:

  • 2 TBSP avocado oil, divided
  • 16-oz block extra firm tofu, pressed and cut into 1-inch cubes
  • Salt and freshly ground black pepper, to taste (for tofu)
  • ¼ tsp garlic powder (for vegetables)
  • 2 cups fresh vegetables (I used Cal-Organic Farms Broccoli Florets and Cal-Organic Farms Cauliflower Florets, about 1 bag of each, pre-washed and chopped)

For Serving and Garnish:

  • 2 green onions (green parts only), thinly sliced
  • ¼ cup fresh herbs, chopped (such as cilantro, mint, or basil)
  • ¼ cup sesame seeds, for garnish


Instructions

  1. Prepare the Coconut Curried Rice: Add the rinsed jasmine rice, lite coconut milk, filtered water, yellow curry powder, and Himalayan sea salt to a large pot with a tight-fitting lid. Stir well to combine. Bring the mixture to a gentle simmer over medium-high heat. Once simmering, reduce the heat to low, cover the pot tightly, and cook for 20 minutes without lifting the lid. After 20 minutes, turn off the heat and let the rice sit, still covered, for an additional 5 minutes. This allows the steam to finish cooking the rice perfectly. Fluff gently with a fork before serving.
  2. Make the Chili Garlic Sauce: While the rice is cooking, prepare your sauce. In a small bowl, whisk together the chili garlic paste, coconut aminos, pure maple syrup, and freshly squeezed lime juice until smooth. Taste and adjust seasonings as needed to reach your desired balance of spicy, savory, and sweet. Set the sauce aside.
  3. Sear the Tofu: Begin preparing the tofu while the rice continues to cook. Ensure your extra-firm tofu has been pressed to remove excess water, then cut it into uniform 1-inch squares. Heat a large non-stick pan or cast-iron skillet over medium-high heat and add 1 tablespoon of avocado oil. Once the oil is shimmering, add the tofu squares to the pan in a single layer (cook in batches if necessary to avoid overcrowding). Season with a sprinkle of salt and pepper. Cook for 8-10 minutes, stirring and turning consistently, until the tofu is beautifully golden brown and crispy on all sides. Remove the seared tofu from the pan and set it aside.
  4. Roast the Vegetables: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper. Add the broccoli and cauliflower florets to the sheet pan. Drizzle them with the remaining 1 tablespoon of avocado oil, ensuring they are lightly coated. Sprinkle evenly with garlic powder, and a touch more salt and pepper. Arrange the vegetables in a single layer and bake for 20-25 minutes, or until they are tender-crisp and slightly charred and caramelized on the outside. Remove the pan from the oven.
  5. Combine & Sauce Everything: Add the freshly baked, charred vegetables to the pan with the seared tofu (or transfer both to a large mixing bowl). Pour the prepared chili garlic sauce over the vegetables and tofu, then add the thinly sliced green onion (green parts only). Toss everything gently but thoroughly until the tofu and vegetables are well coated in the flavorful sauce.
  6. Assemble and Serve: To serve, scoop a generous portion of the fluffy coconut curried rice into individual bowls. Top each bowl with a hearty portion of the sauced tofu and vegetables. Garnish generously with fresh chopped herbs (like cilantro and mint) and a sprinkle of sesame seeds for added flavor and texture. Serve immediately and enjoy! Store any leftovers separately in airtight containers in the refrigerator for up to 5 days, and reassemble and reheat before serving for the best experience.

Notes

Recipe inspired by Feasting At Home. For extra crispy tofu, consider pressing it for at least 30 minutes, or up to an hour, before cooking. This removes excess moisture, allowing it to brown better. Feel free to experiment with different seasonal vegetables like bell peppers, mushrooms, or sweet potatoes, adjusting roasting times accordingly. This bowl is also excellent for meal prepping!
