- 1 cup oat flour
- 1 cup gluten-free old-fashioned rolled oats
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- pinch of powdered ginger
- 1 flax egg (1 TBSP flaxseed meal + 3 TBSP filtered water)
- 2 ripe bananas, mashed
- 1 TBSP Mad Magic Cinnamon Kombucha*
- 1/4 cup unsweetened almond milk
- 1⁄4 cup pure maple syrup
- 1 small apple, diced
- 1 cup carrots, grated
- 1/2 cup raisins and/or walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tray with paper liners, or alternatively, spray the muffin cups generously with coconut oil or a non-stick spray to prevent sticking.
- In a large mixing bowl, combine all of the dry ingredients: oat flour, gluten-free old-fashioned rolled oats, baking powder, cinnamon, and a pinch of powdered ginger. Whisk everything thoroughly to ensure they are well combined and evenly distributed.
- In a separate bowl, prepare your flax egg (1 tablespoon flaxseed meal + 3 tablespoons filtered water, let sit for 5-10 minutes until thickened). Once ready, add the flax egg along with all remaining wet ingredients (mashed bananas, Mad Magic Cinnamon Kombucha, unsweetened almond milk, and pure maple syrup) to the dry mixture. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are perfectly fine and often lead to a tender muffin texture.
