Experience the comforting flavors of apple pie in a quick, healthy, and entirely plant-based breakfast or snack! This Apple Pie Avocado Toast features crisp seasonal apples, crunchy walnuts, and a luxurious 2-ingredient date caramel, making it an irresistible treat any time of day.
As the leaves begin to turn and a crispness fills the air, there’s a unique joy that comes with autumn’s bounty. For many, this signals the start of apple season, a time brimming with the promise of delicious, heartwarming recipes. Is there anything truly better than stepping out of an apple orchard, your basket heavy with fragrant, hand-picked apples, each one a perfect sphere of autumnal delight? The very thought conjures images of cozy kitchens and the sweet scent of baking spices.
While we haven’t made it to the apple orchards yet this year, the excitement is building with each passing week. I always rely on Dan to expertly reach for those high-up, pristine apples, the ones perfectly ripened by the sun. Meanwhile, I enjoy the treasure hunt closer to the ground, carefully sifting through the lower branches for a “diamond in the rough” – perhaps an apple with a little character, but bursting with flavor. The true magic, however, begins when we get home, realizing we’re suddenly faced with a delightful challenge: needing to create “all things apple,” and quickly! That irresistible urge to transform our harvest into something scrumptious takes over.
For a long time, my go-to aspiration has been to bake a traditional apple pie, complete with a golden, flaky crust. However, the reality of a busy schedule often means that a lengthy baking project just isn’t feasible. That’s precisely why these incredible Apple Pie Avocado Toasts with Easy Date Caramel have become a cherished solution. This recipe allows you to indulge in the comforting, nostalgic flavors of apple pie – the sweet-tart apples, the warm spice notes, and a rich, creamy caramel – all without any baking or extensive cooking time.
These toasts are not only incredibly easy to prepare but also wonderfully versatile. They make for a perfect healthy breakfast, a satisfying and quick snack, or even a wholesome dessert that feels truly indulgent. Bursting with fresh, seasonal flavors and packed with nutrients, they offer a delightful twist on classic avocado toast. Get ready to embrace the flavors of fall in the most effortless and delicious way possible, proving that you don’t need a complicated recipe to enjoy the essence of apple pie.
What You Need to Create Delectable Apple Pie Avocado Toasts
My culinary journey with apples has seen many fascinating phases. In my younger years, the crisp sweetness of a Pink Lady was my unwavering favorite. Later, in my early twenties, I wholeheartedly embraced the Honeycrisp, captivated by its unique crunch and perfectly balanced flavor. More recently, I developed an appreciation for Opal apples, admiring their distinct golden hue and delightful taste. Yet, in the last year, I had firmly committed myself to the consistent sweetness and firm texture of Fuji apples, believing I had found my ultimate apple match.
However, all these apple preferences took a delightful turn during a recent visit to Mom’s Organic Market, where I discovered some intriguing Pink Pearl apples. They weren’t particularly striking in appearance; I rather casually tossed them into my produce bag, unassumingly adding them to my already packed cart. Frankly, I was a little disappointed not to find my beloved Fujis, so when I saw “Pink” labeled, I thought, “Ah, probably similar to a Pink Lady… a decent second choice.” Little did I know, a pleasant surprise awaited me!
My camera, the prepared avocado toasts, and I were all genuinely astonished when I sliced open a Pink Pearl apple to reveal its vibrant, unexpected pink interior! It was an instant, beautiful color scheme upgrade that dramatically enhanced the visual appeal of my dish. When it comes to food photography – and indeed, life itself – I always strive to “go with the flow,” a philosophy that can be quite challenging for someone who, like me, enjoys having control over almost everything. Yet, it’s these serendipitous moments, like the unexpected pink heart of an apple, that truly make my day and remind me of the beauty in embracing the unforeseen. These simple surprises often lead to the most delightful and memorable culinary experiences.
Selecting the Perfect Apple for Your Toast
While the Pink Pearl apples offered a stunning visual, any crisp, flavorful apple variety will shine in this recipe. Excellent choices include Honeycrisp, Fuji, Gala, or even a tart Granny Smith if you prefer a sharper contrast. The key is to select apples that are firm and free from blemishes, ensuring a satisfying crunch that complements the creamy avocado and sweet date caramel. This crunch is essential for adding a delightful textural dimension to your toast.
The Sweet Secret: Medjool Dates for Caramel
The luscious, sweet component of this toast is our simple yet extraordinary 2-ingredient date caramel. Medjool dates are renowned for their natural sweetness, rich flavor, and delightfully sticky texture, making them the ideal foundation for a healthy, refined sugar-free caramel. Not only is this caramel a much healthier alternative to its traditional counterpart, but its preparation is also incredibly straightforward, requiring minimal effort for maximum flavor.
The Creamy Foundation: Perfectly Ripe Avocados
Naturally, no avocado toast would be complete without perfectly ripe avocados. When selecting your avocados, look for ones that yield slightly to gentle pressure, indicating optimal ripeness. They provide a wonderfully creamy and subtly flavored base that beautifully balances the sweet and tart elements of the toppings. Beyond their delicious taste and smooth texture, avocados are a nutritional powerhouse, packed with heart-healthy monounsaturated fats, dietary fiber, and a spectrum of essential vitamins and minerals, transforming this toast into a truly nourishing and wholesome meal.
Walnuts: The Crunch and Nutritional Boost
A generous sprinkling of walnuts adds a delightful textural contrast and a significant boost of healthy omega-3 fatty acids to each bite. Their earthy, slightly bitter notes perfectly complement the sweet apples and rich caramel, adding a layer of sophisticated depth to the toast. If walnuts aren’t your preference, other nuts like pecans or sliced almonds would also be equally delicious and provide a similar crunch and nutritional benefit.
How to Assemble Your Irresistible Apple Pie Avocado Toasts
The delightful fusion of crisp apples and creamy avocado is a combination I find myself eagerly revisiting every year, especially as the seasons transition into the cozy embrace of autumn. These Apple Pie Avocado Toasts are far more than just a delightful fall breakfast; they seamlessly transition into a deeply satisfying snack or even a light, wholesome dessert. While the avocado preparation method I’m about to share might initially strike you as a tad “fussy,” I wholeheartedly assure you that this minimal extra step is profoundly worth the effort. It’s this small, thoughtful detail that elevates the entire flavor profile of the toast, transforming it from merely good to truly extraordinary and memorable.
I stumbled upon this quick and surprisingly impactful avocado trick thanks to the insightful recipes from Love & Lemons, a continuous source of culinary inspiration. What I discovered is that a simple squeeze of fresh lemon juice, combined with a delicate sprinkle of sea salt, imparts an incredible depth and brightness to the creamy avocado. The acidity of the lemon awakens the avocado’s natural flavors, preventing it from tasting bland, while the sea salt enhances every subtle note. This combination creates a beautifully seasoned, vibrant base that truly makes the entire toast sing. Once you experience this method, you’ll undoubtedly understand what I mean; it has become an indispensable part of my avocado toast routine, a true game-changer in achieving perfectly balanced and flavorful results.
Step-by-Step Assembly Guide for the Perfect Toast
- Prepare the Easy Date Caramel: Begin by placing your soft, gooey Medjool dates into a food processor. If your dates aren’t super soft, simply soak them in boiling water for about 10 minutes to ensure a smooth blend. Process them until they are finely chopped, then add the initial 1/2 cup of water and continue to blend until a thick, paste-like consistency is achieved. Gradually add additional water, 1-2 tablespoons at a time, pulsing until your date paste transforms into a smooth, luxurious, and runny caramel liquid. You control the consistency – use more water for a drizzly caramel, less for a thicker, spreadable version. This caramel can be stored in an airtight container in the refrigerator for up to two weeks, making it perfect for meal prep.
- Toast Your Bread: Select your preferred bread – whether it’s a rustic sourdough, wholesome whole wheat, or a gluten-free alternative – and toast it to your desired level of golden crispness. A sturdy, well-toasted slice provides the perfect foundation to support all the delicious toppings.
- Season the Avocados: Slice your ripe avocados in half and, using a knife, gently score the flesh inside each half in a crosshatch pattern. Squeeze a generous amount of fresh lemon juice over the scored avocado, followed by a sprinkle of Himalayan sea salt. Allow the avocados to sit for a few minutes; this brief marinating time allows the flavors to truly penetrate and enhance the avocado’s creaminess.
- Prepare the Apples: While your bread is toasting and avocados are marinating, core your chosen apple and slice it into thin, elegant wedges. If you plan to prepare your ingredients in advance or won’t be serving immediately, toss the apple slices lightly with a bit of lemon juice to prevent them from browning, preserving their fresh appearance.
- Assemble Your Toasts: Once your bread is toasted, scoop out the lemon and sea salt-infused avocado mixture. Gently smash approximately half an avocado onto each slice of toast with a fork, creating a creamy and flavorful base. Artfully arrange the thin apple slices over the avocado. Finish by sprinkling with crunchy walnuts and, most importantly, drizzling generously with your homemade easy date caramel. For an added touch of nutrition and texture, garnish with a few hemp hearts. Serve your Apple Pie Avocado Toasts immediately to enjoy them at their freshest and most delicious!
Creative Ways to Savor Your Leftover Date Caramel
One of the many delightful bonuses of crafting this Apple Pie Avocado Toast recipe is the generous amount of leftover date caramel you’ll inevitably have. This is a truly wonderful “problem” to encounter, especially during the fall and winter months when warm, comforting, and naturally sweet flavors are most appreciated! This easy, healthy, and refined sugar-free caramel is incredibly versatile, capable of elevating a wide array of dishes far beyond these delightful toasts. Here are some of my absolute favorite and most creative ideas for utilizing every last drop of your homemade date caramel:
- Elevated Apple Rounds: Transform simple apple rounds into a gourmet snack. Generously spread the date caramel onto crisp apple slices, then layer with a dollop of your favorite nut butter – be it creamy peanut butter, rich almond butter, or smooth cashew butter. For an extra touch of decadence, sprinkle with dark chocolate chips or sweet raisins, creating a wholesome treat that echoes the indulgence of candy apples.
- Naturally Sweetened Beverages: Infuse your morning drinks with natural sweetness. Drizzle a spoonful (or two!) of date caramel into your shakes or smoothies for a rich, nuanced boost of flavor and sweetness. It’s also exceptionally delicious swirled into your coffee or latte, serving as a wholesome, plant-based alternative to artificial sweeteners and syrups.
- Pancake & Waffle Perfection: Reimagine your breakfast staples! Replace traditional maple syrup with this luscious date caramel, spooning it generously over a stack of fluffy pancakes, golden-brown waffles, or even homemade French toast. It adds a sophisticated, caramelized sweetness that is both indulgent and healthier.
- Dessert’s Ideal Companion: This date caramel is a dream pairing for various desserts. Use it as a decadent topping for dairy-free ice cream, a delightful dip for fresh fruit platters, or even incorporate it as a binding and sweet element in raw dessert bars and energy bites. The possibilities are truly boundless for creating perfect caramel-infused dessert combinations.
- A Spoonful of Happiness: And, let’s be honest, sometimes the best way to enjoy this incredible date caramel is simply by the spoonful. When the craving strikes, don’t hesitate to enjoy a spoonful or two straight from the jar. No judgment here – it’s a pure, unadulterated moment of delicious satisfaction!
Enjoy every delightful bite of these Apple Pie Avocado Toasts and revel in all the inventive ways you discover to use that utterly amazing date caramel!

Total Time: 20 mins
Yield: 4 toasts
Diet: Vegan
Description
Apple Pie Avocado Toast with seasonal apples, walnuts, and 2-ingredient date caramel. Perfect for a healthy breakfast or snack!
Ingredients
- 15–20 soft, gooey Medjool dates (soak in boiling water for 10 minutes to soften)
- 1/2 cup water + 1 TBSP increments until you reach desired consistency
- 4 slices of bread, toasted (gluten-free if needed)
- 2 avocados
- 1 lemon, squeezed
- Himalayan sea salt
- 1 apple, any kind!
- 1/2 cup walnuts (optional to toast them for 8 minutes at 350°F but I used raw nuts here)
Instructions
- To make the easy date caramel, add your gooey dates to a food processor and blend until they are finely chopped.
- Add the water and blend until it turns into a date “paste”. Continue to add water in 1-2 TBSP increments and pulse until the paste turns into a smooth runny liquid*.
- Transfer the date caramel to an airtight container and store in the refrigerator for up to two weeks.
- Slice your avocados in half and score the inside with a knife.
- Squeeze a bit of fresh lemon into each avocado halve and sprinkle them with a bit of Himalayan sea salt and set aside to marinade.
- Meanwhile, toast your bread and core and slice your apples into thin wedges*.
- To assemble the Apple Pie Avocado Toasts, scoop out the lemon sea salt avocado mixture and smash 1/2 avocado on each toast with a fork. Top the toast with sliced apple, walnuts, and drizzle with easy date caramel. Garnish with hemp hearts. Serve immediately!
Notes
Use more water for a runnier drizzly date caramel and less for a thick, spreadable caramel. I added more water to mine and used a piping bag to drizzle my date caramel onto the toast.
If preparing the ingredients to assemble later toss your apple in lemon juice to prevent browning.
