  • 1½ TBSP filtered water
  • ½ TBSP raw tahini
  • ½ cup gluten-free oat flour
  • ¼ cup almond flour
  • ½ TBSP lemon juice
  • ½ tsp garlic powder
  • ¼ tsp dried basil
  • 1/4 tsp dried oregano
  • pinch Himalayan sea salt
  • pinch red pepper flakes
  • tomato sauce
  • 1 tomato, sliced
  • 1/2 green bell pepper, sliced
  • ½ cup black olives, sliced

For serving

  • fresh vegan parmesan


Instructions

  1. Preheat the oven to 400°F (200°C) and line a pizza pan or baking sheet with parchment paper. This prevents sticking and makes for easy cleanup.
  2. Briefly steam the zucchini noodles (or chopped zucchini) on the stovetop for 2-3 minutes, or until they are just fork-tender. Be careful not to overcook them, as they will bake further in the oven.
  3. While the squash is steaming, prepare a large mixing bowl by adding the white chia seeds and filtered water. Mix well to combine and set aside to allow the chia seeds to form a gel, which acts as a binder.
