Description

Paleo chocolate chip waffles made with almond flour, cacao powder, canned coconut milk, and dark chocolate chunks. Serve with maple syrup for breakfast!


Ingredients

  • 2 TBSP ground flaxseed meal + 6 TBSP filtered water (2 flax eggs)
  • 1 1/2 cups almond flour
  • ⅓ cup canned coconut milk lite
  • ¼ Hu Kitchen Gems
  • 1 TBSP raw cacao powder
  • 1 TBSP pure maple syrup
  • ½ tsp baking soda
  • pinch of Himalayan sea salt


Instructions

  1. Spray your waffle iron with avocado oil and preheat.
  2. While the waffle iron heats up, whisk up the flax egg in a mixing bowl and allow to gel for ~5 minutes.
  3. Add in the coconut milk and maple syrup and mix to combine.
  4. Next, add in the almond flour, cacao powder, maple syrup, baking soda, and Himalayan sea salt. Mix thoroughly. The mixture should be thick but pourable.
  5. Lastly, add in your chocolate Gems.
  6. Pour the mixture into the waffle iron and heat until cooked throughout and golden brown on the outside, ~4-5 minutes.
  7. Serve immediately with pure maple syrup and more chocolate chips, if desired.
