These Smoky White Bean & Beet Burgers are a vibrant and flavorful plant-based delight! Crafted with a wholesome blend of earthy beets, hearty quick-cooking oats, creamy navy beans, crunchy walnuts, and a distinctive mix of smoky seasonings including smoked paprika, cumin, and chili powder. This recipe delivers a satisfying burger experience that’s both healthy and incredibly tasty. Perfect for grilling, baking, or pan-frying, these vegan patties are versatile enough to be served on traditional buns, crisp lettuce wraps, or as a protein-rich addition to salads and bowls. They’re naturally gluten-free and packed with fiber and plant-based protein, making them an ideal choice for any meal, from a casual weeknight dinner to a celebratory BBQ. Prepare a batch for fresh enjoyment or freeze them for convenient future meals!


Ingredients

  • 1 cup walnuts 
  • ½ cup quick cooking oats (ensure gluten-free if needed)
  • ¼ cup ground flaxseed 
  • ¼ tsp garlic powder 
  • 1 tsp cumin
  • ½ tsp chili powder 
  • ¼ tsp smoked paprika (essential for smoky flavor)
  • ¼ tsp Himalayan sea salt 
  • pinch of black pepper (freshly ground recommended)
  • 45 small beets, peeled and cooked (roast or steam until tender)
  • 1 15-oz can Eden Foods Organic Navy Beans, thoroughly drained and rinsed
  • 1 TBSP coconut aminos (for umami and a hint of sweetness)


Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. In a high-speed blender or food processor, combine the walnuts, quick-cooking oats, ground flaxseed, garlic powder, cumin, chili powder, smoked paprika, salt, and black pepper. Pulse everything together until the mixture resembles a coarse, rough flour. Ensure no large chunks of walnuts or oats remain, but avoid over-processing into a fine powder, as some texture is desired.
  3. Add the cooked beets (either pre-packaged or home-roasted/steamed), the thoroughly drained and rinsed navy beans, and the coconut aminos to the food processor with the dry ingredients. Pulse again until the mixture is moist, well-combined, and cohesive enough to form patties. Scrape down the sides of the processor as needed to ensure all ingredients are fully incorporated into a uniform “dough.”
  4. To form the patties, use a ~⅓ cup measuring cup to scoop uniform portions of the mixture onto the parchment-lined baking sheet. For best results and to prevent sticking, lightly spray the inside of your measuring cup with vegetable oil cooking spray before each scoop. The mixture should yield approximately 6 patties. Dampen your hands slightly with water and gently shape each scoop into a round patty. Flatten them to about ¾ to 1 inch thick using the back of a spatula (also lightly sprayed with oil, if desired) to ensure even cooking.
  5. Carefully transfer the baking sheet with the formed patties into the preheated oven. Bake for an initial 20 minutes to allow the burgers to firm up and begin developing a crust. After this time, carefully remove the baking sheet from the oven and, using a spatula, gently flip each patty. Return the baking sheet to the oven and continue baking for an additional 15-20 minutes, or until the burgers are beautifully browned on the outside and feel firm to the touch when gently pressed.
  6. Serve your hot, freshly baked Smoky White Bean & Beet Burgers immediately with your favorite buns, fresh lettuce wraps, or over a salad, and an assortment of delicious toppings. Any leftover burgers can be stored in an airtight container in the refrigerator for up to one week. For longer storage, freeze individual cooled patties wrapped in parchment and then foil for up to three months.

Notes

This recipe is incredibly versatile! Feel free to adjust the spice levels to your preference. If you enjoy a bit more heat, add an extra pinch of chili powder or a dash of cayenne pepper. For a less smoky flavor, you can slightly reduce the smoked paprika, though it’s a key ingredient for the signature taste.

To prepare your own beets: You can boil them until tender (peel after cooking), or roast them. To roast, peel and chop raw beets into 1-inch cubes, toss with a tablespoon of olive oil, and roast at 400°F (200°C) for 30-45 minutes, or until fork-tender. Ensure they are cooled before adding to the burger mixture.
