Sweet Potato Mash

  • 34 medium sweet potatoes, peeled and cut lengthwise
  • 2 tablespoons runny tahini
  • 1 teaspoon sweet paprika
  • Pinch of Himalayan sea salt (or to taste)
  • Unsweetened almond milk, as needed for consistency

Sautéed Mushrooms

  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 clove garlic, minced
  • 8 ounces fresh mushroom blend (such as oyster, maitake, beech, shiitake), cleaned and sliced if large
  • Fresh cracked pepper, to taste
  • Pinch of Himalayan sea salt (or to taste)

For Serving (Optional)

Instructions

  1. **Prepare the Sweet Potatoes:** Preheat your oven to 400ºF (200ºC). Line a large baking sheet with parchment paper. Wash and scrub the sweet potatoes thoroughly. Place them cut-side down on the prepared baking sheet. Roast for 35-40 minutes, or until the undersides are nicely browned and the potatoes are very soft when gently squeezed. Remove from the oven and set aside to cool slightly.
  2. **Prepare the Mushrooms:** While the sweet potatoes are baking, clean your mushrooms. Rinse them gently under cold water and then pat them as dry as possible with a clean kitchen towel or paper towels. This step is crucial for achieving crispy mushrooms.
  3. **Sauté the Mushrooms:** Add the olive oil to a large skillet and place it over medium-high heat. Allow the oil to warm for about a minute until shimmering. Add the dried mushrooms to the skillet in a single layer. Cook without stirring much for about 3-5 minutes, allowing them to release their moisture and begin to brown.
  4. **Add Aromatics:** Once the mushrooms start to release their moisture and the pan looks less wet (around 5 minutes in), sprinkle in the fresh thyme, minced garlic, and a pinch of Himalayan sea salt. Give the mushrooms a good shake or gentle toss to distribute the aromatics evenly.
