Description

Vegan apple cider donuts made with oats, almond butter, and apple cider finished with a refined-sugar-free cinnamon and apple chip dusting!


Ingredients

Apple Cider Donuts

  • 1/2 cup apple cider or apple juice
  • 2 flax eggs (2 TBSP ground flaxseed meal + 5 TBSP filtered water)
  • ¾ cup unsweetened almond milk
  • 3/4 cup gluten-free oat flour 
  • 3/4 cup almond flour
  • 2 tsp ground cinnamon
  • pinch of ground nutmeg
  • 1 tsp baking powder
  • 1/2 cup creamy almond butter
  • 1/4 cup pure maple syrup

Cinnamon Apple Dusting

  • 1/2 cup unrefined coconut sugar 
  • ½ tsp ground cinnamon 
  • 23 TBSP unsweetened almond milk
  • ½ cup Bare Snacks Cinnamon Apple Chips, crushed


Instructions

  1. Preheat the oven to 350°F and lightly grease a donut pan with non-stick spray. 
  2. In a small bowl, whisk together the flax egg by mixing the ground flaxseed with filtered water and allowing it to gel for 5 minutes. 
  3. To the same bowl, add in the almond milk, almond butter, apple cider, and maple syrup. Mix everything well with a fork to combine. 
  4. Next, add in the oat flour, almond flour, cinnamon, nutmeg, and baking powder to the bowl and use a spatula to mix everything until you have a thick batter. 
  5. Divide the batter between the donut molds, using a spoon or a ladle. 
  6. Transfer the donut pan to the oven and bake for 22-25 minutes, or until they start to pull away from the edges of the pan and are slightly firm to the touch. Remove the donuts from the oven and allow them to cool for 5-10 minutes before removing. Use a small knife to wiggle each donut out of the mold, then transfer them to a cooling rack to cool completely. 
  7. Add the coconut sugar, cinnamon, and apple chips to a high speed blender and process until you have a fine dust. Transfer the “dust” into a large bowl. Pour the almond milk into a small bowl. To dust the donuts, quickly dip each the donut into the almond milk then swirl them around in the cinnamon sugar apple dust to roughly coat them. Repeat this process with the remaining donuts until all of the donuts are well coated coated. 
  8. Enjoy immediately warm or chilled! Store any leftover donuts in the refrigerator for up to one week.
