- pinch of sea salt

- 4 sheets sushi nori (dried seaweed)
- 1 roasted red bell pepper (thinly sliced, jarred or homemade)
- 2 ripe avocados, thinly sliced
- handful of fresh sprouts (optional, for added crunch)
For Serving
- Tamari or soy sauce
- pickled ginger
- toasted sesame seeds
- wasabi
Instructions
- Prepare the Sushi Rice: In a medium saucepan, combine the sushi rice and filtered water. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a low simmer, cover the pot tightly with a lid, and allow it to cook until all the water is completely absorbed and the rice is tender, which typically takes about 20 minutes. After cooking, remove the pot from the heat but keep the lid on, letting it stand for an additional 10 minutes to steam through.
- Make the Vinegar Mixture: While the rice is cooking, prepare the seasoning. In a small saucepan, combine the brown rice vinegar, organic coconut sugar, and a pinch of sea salt. Heat this mixture over medium heat, stirring occasionally, until both the sugar and salt have fully dissolved. Remove from heat and set aside to cool slightly.
- Season the Rice: Once the rice has rested, transfer it to a large bowl. Pour the cooled vinegar mixture evenly over the rice.
