Description

These wholesome blueberry almond protein cookies are made with creamy almond butter, hearty oats, and Bob’s Red Mill almond protein powder, all naturally sweetened with ripe banana.   • 1 cup mashed banana (about 2 large or 3 medium bananas!)
  • ½ cup creamy almond butter 
  • 1 TBSP unsweetened almond milk
  • ¾ cup Bob’s Red Mill Almond Protein Powder
  • 1 cup gluten-free old-fashioned rolled oats 
  • ⅓ cup sliced almonds
  • 1 TBSP hemp hearts 
  • 1 tsp ground cinnamon
  • ½ cup dried blueberries or dried cherries


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper for easy cleanup.
  2. In a large mixing bowl, thoroughly smash the ripe banana with a fork until it becomes completely smooth and free of lumps. Then, stir in the almond butter and almond milk, mixing until all wet ingredients are well combined and creamy. Next, add all the dry ingredients: the almond protein powder, gluten-free old-fashioned rolled oats, sliced almonds, hemp hearts, and cinnamon. Mix well until a cohesive cookie dough forms.

  4. Using a ¼ cup measuring scoop, portion out the dough. Form large cookies by gently flattening each dough ball with your hands before carefully placing them onto the prepared baking sheet.
