- 1 package Cece’s Veggie Noodle Co. Riced Broccoli (~5 cups), or riced broccoli from one large head
- 1/8 tsp garlic powder
- 1/4 cup diced white onion
- pinch of Himalayan sea salt and black pepper, to taste
- 1 TBSP fresh lime juice (~ 1 lime, squeezed)
- 1 tsp ground cumin, plus more to taste
- 1/3 cup salsa (your preferred kind), plus more for serving
- 1/4 cup fresh chopped cilantro, plus more for serving
For the Fajita Veggies:
- avocado oil spray (optional)
- 1 medium red bell pepper, thinly sliced
- 1/2 medium red onion, thinly sliced
- pinch of Himalayan sea salt
For the Black Beans:
- 1 15 oz. can black beans, thoroughly drained and rinsed
- 1/2 tsp ground cumin
- 1/8 tsp ground coriander
Recommended Toppings (For Serving):
- sliced avocado or guacamole
- fresh cilantro, chopped
- extra salsa
- your favorite hot sauce
- additional fresh lime wedges or juice
Instructions
- Heat a large rimmed skillet over medium heat.
- Once warm, add a bit of avocado oil spray and the riced broccoli (~5 cups). Season with garlic powder, diced white onion, and a pinch each of sea salt and black pepper. Sauté for 1 minute, stirring frequently.
- Place the lid on the skillet to steam the “rice” for 5-7 minutes, or until tender-crisp and fragrant, stirring occasionally.
- Remove the broccoli rice from heat and transfer it to a large mixing bowl. Add the fresh lime juice, ground cumin, 1/3 cup salsa, and 1/4 cup fresh chopped cilantro. Stir well to combine and adjust seasonings to your preference, adding more salt, pepper, lime juice, salsa, or spices to taste. Set aside.
- Heat the same large skillet back over medium-high heat. Add a little more avocado oil spray (optional) along with the thinly sliced red bell pepper and red onion and a pinch of sea salt. Sauté, stirring frequently, until the vegetables are slightly softened but still vibrantly colored (~about 5 minutes).
- While the fajita veggies cook, add the drained and rinsed black beans to a small saucepan over medium heat. Season with 1/2 tsp ground cumin and 1/8 tsp ground coriander. Warm through, then cover until ready to serve.
- To serve, divide the seasoned broccoli rice, warm black beans, and sautéed fajita veggies between your individual serving bowls. Top generously with sliced avocado, extra salsa, fresh cilantro, your favorite hot sauce, and an extra squeeze of fresh lime juice.
