  • 4 cups lacinato kale, stems removed and shredded
  • 4 cups green Swiss chard, stems removed and shredded
  • 1 cup purple cabbage, finely shredded
  • 1 cup carrots, shredded
  • 1/2 cup fresh blueberries
  • 1/2 cup chickpeas, canned, drained, and rinsed
  • 1 ripe avocado, sliced or diced
  • 1/4 cup slivered almonds
  • 2 TBSP sunflower seeds, unsalted
  • 2 TBSP hemp hearts
  • 1 (15 oz.) package extra-firm tofu, pressed, sliced, and pan-fried

For the Easy Oil-Free Orange Tahini Dressing

  • 4 TBSP runny tahini (ensure it’s well-stirred)
  • juice from 1 large orange, freshly squeezed
  • juice from 1/2 lemon, freshly squeezed
  • 24 TBSP filtered water, or more as needed for desired consistency
  • Pinch of Himalayan sea salt, to taste
  • Pinch of freshly ground black pepper, to taste


Instructions

  1. Prepare the Tofu: If you haven’t already, press your extra-firm tofu to remove excess water. Then, slice it into desired shapes (cubes or thin slabs work well). Heat a non-stick skillet over medium heat and add a small amount of avocado oil (or skip for completely oil-free cooking, just be mindful of sticking). Add the sliced tofu and pan-fry for 5-6 minutes on each side, until beautifully golden brown and slightly crispy. Roughly chop the cooked tofu with a spatula, season with a pinch of Himalayan sea salt and black pepper, and set aside to cool. Refrigerate until you’re ready to assemble your salad.
  2. Make the Dressing: In a medium bowl, combine all the ingredients for the Easy Orange Tahini dressing: runny tahini, freshly squeezed orange juice, fresh lemon juice, and a pinch each of sea salt and black pepper. Whisk vigorously until all ingredients are thoroughly combined and the dressing is smooth.
