Hello, friends! I know it might seem like I’ve been a little quiet in the digital sphere lately. While I’ve been enjoying a bit of a social media hiatus, allowing my Instagram stories to remain blank and resisting the urge to share every daily snapshot, it’s been a period of profound growth and transformation behind the scenes. This quiet time has been essential for preparing for a cookbook launch, settling into our new home with M, and undertaking significant personal and professional work to shed old habits and embrace new mindsets. It truly feels like a caterpillar moment – curled up in a cocoon, anticipating a miraculous metamorphosis.

Speaking of effortless transformation, there’s another star that undergoes a remarkable change with minimal effort: tempeh! And today, I’m thrilled to share a new recipe that highlights just how incredible this plant-based protein can be. This Apple Maple Tempeh Marinade is an absolute game-changer. It’s ready in just 30 minutes, offering a quick, easy, and incredibly versatile plant-based protein option that you can seamlessly integrate into countless meals throughout your week.

Why Tempeh Deserves a Spot in Your Kitchen

Tempeh, a fermented soybean product originating from Indonesia, is an exceptional source of plant-based protein, making it a staple for anyone looking to enrich their diet with wholesome, nutritious ingredients. Beyond its impressive protein content, tempeh is packed with fiber, which aids digestion and promotes gut health. The fermentation process also breaks down some of the compounds in soybeans that can be difficult to digest, making tempeh a more gut-friendly option for many. Its firm, nutty texture makes it a fantastic canvas for absorbing flavors, transitioning from a humble block into a deeply satisfying meal component.

While some describe tempeh as having a slightly bitter undertone, this marinade masterfully transforms it. The carefully balanced sweet and tangy notes in this Apple Maple Tempeh Marinade complement tempeh beautifully, softening any potential bitterness and infusing it with an irresistible flavor that even first-time tempeh eaters will adore. It truly is a testament to how a simple marinade can elevate a basic ingredient into something extraordinary.

What You Need to Make Apple Maple Tempeh Marinade

Crafting a deeply flavorful marinade for tempeh doesn’t require a long list of obscure ingredients. In fact, this recipe relies on a few pantry staples, with one special ingredient taking center stage. Here’s what you need to create this incredibly delicious tempeh marinade:

  • Avocado oil: Provides a neutral base and healthy fats, helping to carry the flavors into the tempeh.
  • Garlic powder: Adds a warm, aromatic depth that’s essential for any savory marinade.
  • Dijon mustard: Offers a zesty, piquant kick and helps to emulsify the marinade, ensuring all flavors combine harmoniously.
  • Pure maple syrup: A natural sweetener that brings a beautiful, rich caramel note, balancing the tanginess of the mustard and lemon.
  • Eden Foods Apple Butter: The true star of this marinade! It introduces a delightful hint of sweet and tangy apple, along with a subtle spice that adds incredible complexity. This particular apple butter is my absolute favorite because it’s completely fat-free and sodium-free, and it contains no refined sugars, making it a wonderfully wholesome choice.
  • Lemon juice: Brightens the entire flavor profile, cutting through the richness and adding a fresh, vibrant lift.
  • Tamari Lite: A gluten-free alternative to soy sauce, providing essential umami and a savory depth without overpowering the other ingredients.
  • Tempeh: The robust, plant-based protein ready to absorb all these amazing flavors.

That’s it! With these simple yet powerful ingredients, you’re set to create a marinade that will transform your tempeh into a culinary delight. And remember, the Eden Foods Apple Butter isn’t just for marinades! It’s fantastic on oatmeal, toast, pancakes, waffles, or baked into your favorite sweet treats.

How to Prepare and Marinate Your Tempeh

This marinade is incredibly straightforward to mix up, requiring minimal preparation and promising maximum flavor. You’ll be amazed at how quickly you can get this delicious tempeh ready for cooking.

First, gather all your marinade ingredients. In a large mixing bowl (or directly in your baking dish, which is my preferred method for less cleanup!), combine the avocado oil, garlic powder, Dijon mustard, pure maple syrup, Eden Foods Apple Butter, fresh lemon juice, and Tamari. Whisk them vigorously until everything is thoroughly blended and smooth. The apple butter will help create a slightly thicker, luxurious consistency that clings beautifully to the tempeh.

Next, let’s prepare your tempeh. While optional, a popular chef’s tip for tempeh is to steam or simmer it for about 10 minutes before marinating. This process helps to remove any residual bitterness and, more importantly, opens up the tempeh’s pores, allowing it to soak up even more of that delicious marinade flavor. Once steamed, pat the tempeh dry and cut it into your desired shapes. Strips are excellent for pan-frying or baking, while cubes work wonderfully in bowls or stir-fries. Add the tempeh pieces to the bowl with your prepared marinade, ensuring every piece is thoroughly coated. You can use a spoon or your hands to gently toss and massage the marinade into the tempeh.

Now comes the waiting game, but thankfully, it’s a short one! Marinate the tempeh for at least 30 minutes. If you have the time and are around, giving it a flip halfway through helps ensure even saturation, though it’s not strictly necessary. For an even deeper flavor, especially if you’re planning for meal prep, you can marinate the tempeh in the refrigerator for several hours or even overnight. This allows the tempeh to fully absorb all the sweet, tangy, and savory notes, promising an even more profound taste experience.

Cooking Your Apple Maple Tempeh: Oven-Bake, Pan-Fry, or Air Fry

Once your beautifully marinated tempeh is ready, you have a few excellent cooking methods to choose from, depending on your preference and available equipment. Each method yields a slightly different texture, but all result in deliciously flavored tempeh.

Oven-Baking for Hands-Off Perfection

If you prefer a hands-off approach and want to cook a larger batch, oven-baking is a fantastic option. When your marinating time is almost complete, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper; this not only prevents sticking but also makes cleanup a breeze.

Carefully transfer the marinated tempeh strips or cubes onto the parchment-lined baking sheet, arranging them in a single layer to ensure even cooking and browning. Pop the baking sheet into the preheated oven. Bake for 10 minutes, then remove the sheet, flip each piece of tempeh to ensure even crispiness, and bake for an additional 10 minutes. The tempeh should come out golden brown, slightly caramelized, and wonderfully tender inside with delightful chewy edges. Remove from the oven and serve warm.

Pan-Frying for Quick Crispy Edges

For those who love a bit of a crispier exterior and are short on time, pan-frying is an excellent alternative. Heat a large skillet (cast iron or non-stick works best) over medium heat. You may add a tiny bit of avocado oil if your tempeh is sticking, but the marinade itself contains oil. Transfer the marinated tempeh strips to the hot skillet in a single layer, being careful not to overcrowd the pan. Cook the tempeh until it’s beautifully golden brown and sticky with caramelized marinade, which usually takes about 5 minutes on each side. The goal is a rich, slightly charred exterior that bursts with flavor. Cook in batches if necessary to avoid steaming the tempeh.

Air Frying for Ultimate Crunch (Bonus Method!)

If you own an air fryer, this method is ideal for achieving maximum crispiness with minimal oil. Preheat your air fryer to 375°F (190°C). Arrange the marinated tempeh in a single layer in the air fryer basket. Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking and a uniformly crispy texture. The air fryer will give your tempeh an incredible crunch that’s hard to beat!

Description

This easy 30-minute tempeh marinade is crafted with the perfect blend of apple butter, yellow mustard, and pure maple syrup. It’s ideal for quick meal prep and serving with your favorite sides for a delicious plant-based meal.

Ingredients

  • ¼ cup avocado oil
  • ½ tsp garlic powder
  • 2 TBSP Dijon mustard
  • 2 TBSP pure maple syrup
  • 1 TBSP Eden Foods Apple Butter
  • 2 TBSP lemon juice
  • 2 TBSP Tamari Lite
  • Two 8-oz. packages of tempeh

Instructions

  1. In a large bowl, whisk together the avocado oil, garlic powder, Dijon mustard, maple syrup, apple butter, lemon juice, and Tamari until well combined.
  2. Cut the tempeh into desired strips or cubes. If desired, you can steam the tempeh for 10 minutes prior to marinating to enhance flavor absorption and reduce bitterness. Add the tempeh pieces to the bowl with the prepared marinade, ensuring all pieces are thoroughly coated.
  3. Marinate the tempeh for at least 30 minutes. For deeper flavor, marinate for several hours or overnight in the refrigerator, flipping halfway through if possible. Once ready to cook, preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  4. Transfer the marinated tempeh to the parchment-lined baking sheet, arranging in a single layer. Bake for 10 minutes. Flip the tempeh and bake for another 10 minutes, or until golden brown and slightly crispy. Alternatively, you can add the marinated tempeh to a large skillet over medium heat and pan-fry until golden brown and sticky, about 5 minutes on each side. For an even crispier texture, air fry at 375°F (190°C) for 10-12 minutes, shaking the basket halfway.
  5. Remove from the oven, skillet, or air fryer and serve warm with your favorite optional sides. Store any leftover cooked tempeh in an airtight container in the refrigerator for up to 5 days and reheat gently before serving.
